Ingredients
  

Apple Blueberry Filling

  • 8 Granny Smith apples
  • 2 cups blueberries
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • 2 teaspoons vanilla bean paste
  • 2 teaspoons lemon juice
  • 1 teaspoon orange extract
  • 1 cup brown sugar

Crisp Topping

  • 1 ⅔ cup all purpose flour
  • 1 ⅓ cups oatmeal
  • 1 cup brown sugar
  • 1 cup salted butter

Instructions
 

  • Preheat the oven to 425°.
  • Spray a cookie sheet with nonstick cooking spray and set aside.
  • Core the apples, peel if you prefer.
  • Slice into 1⁄2 inch slices.
  • Place apples into a large bowl.
  • Mix in cinnamon, ginger, nutmeg, vanilla bean paste, lemon juice, orange extract, and brown sugar until combined.
  • Fold in blueberries.
  • Place apple blueberry mixture in an even layer on the prepared baking sheet and cover with foil.
  • Bake for 15 minutes.
  • While the fruit mixture is baking, prepare the crisp topping mixture.
  • In a medium bowl, add flour, oatmeal, brown sugar, and mix together.
  • Mix in room temperature butter until you have coarse crumbles.
  • Remove fruit mixture from the oven, remove foil, and top with crisp topping.
  • Bake for 25-30 minutes until the apples are soft and the crisp topping is golden brown.
