It’s an easy, delicious treat that really hits the spot and ticks all the boxes. I love to serve this for dessert when my kids come over for weekend dinner. I also love bringing it to summer BBQs, potlucks, and even holiday gatherings. There’s never a wrong time to make this dessert because it’s such a great combination of classic flavors. In fact, it’s so classic and filled with nostalgic goodness that everyone always gets excited when they see me set it out. How to Make Blueberry Coffee Cake

It’s just as simple to make this recipe as it is to gather up the ingredients for it. It’s so easy even beginners can make it.

Step 1: Prep

Preheat the oven to 350 degrees and spray a 9×9 baking dish with nonstick cooking spray. Set aside.

Step 2: Make the Cake Batter

Whisk the flour, sugar, baking powder, baking soda, and salt together in a medium bowl. Then, add the butter, milk, egg, and vanilla and mix until just combined.

Step 3: Make the Crumble

Using a pastry cutter or a fork, combine the flour, sugar, and butter in a small bowl until the mixture resembles coarse crumbs.

Step 4: Layer the Cake

Add the cake batter to the prepared baking dish and spread it into an even layer. Then, add half the crumble mixture and top it with blueberry pie filling. Top with the remaining crumb mixture.

Step 5: Bake

Bake for 1 hour or until the top is light brown. Remove from the oven, let cool, cut into squares, and enjoy!

Ingredients
  

For the Coffee Cake

  • 1 ¼ cup all purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter
  • ½ cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 21 ounce blueberry pie filling

For the Crumb Filling and Topping

  • ½ cup all purpose flour
  • ¼ cup sugar
  • 2 tablespoons butter

Instructions
 

  • Preheat the oven to 350° and spray a 9 x 9 baking dish with non-stick cooking spray. Set aside.

For the Coffee Cake

  • In a medium bowl, whisk flour, sugar, baking powder, baking soda and salt together.
  • Add butter, milk, egg and vanilla extract and mix just until combined.
  • Pour cake batter into the prepared baking dish and spread evenly.

For the Crumb Topping and Filling

  • In a small bowl, using a pastry cutter or a fork, combine flour, sugar and butter together until mixture resembles coarse crumbs.
  • Sprinkle half of the mixture over the batter.
  • Spread blueberry pie filling over the crumbs and then add the remaining crumb mixture.
  • Bake for 50-60 minutes or until the top is light brown.
  • Remove from oven, let cool and enjoy.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
