Mississippi Chicken
Mississippi chicken is one of the easiest and most delicious chicken recipes you’ll ever make. Chicken breasts are combined with onion, au jus, ranch seasoning, butter, and pepperoncini to create that classic Mississippi flavor that we all love in the classic pot roast. Except, it’s made with chicken. After slow cooking for hours, you get a dish loaded with zest flavor and tender chicken that melts in your mouth with every bite.
Why You’ll Love This Mississippi Chicken
- It’s made in the slow cooker, so the prep is super easy.
- It’s a budget-friendly meal that uses simple ingredients.
- It only takes a few ingredients that you might already have in your kitchen or that can be easily found at your local grocery store.
Mississippi Chicken Tips and Variations
This recipe is so absolutely simple, I only have a couple of tips for it. I have some variations here, as well, that you can use to switch things up if you like.
Tips
- Always spray your slow cooker for easy cleanup
- If you decided to shred your chicken, do it while it’s as hot as possible to comfortably handle. Hot chicken shreds much better than cool chicken.
Variations
- You can use chicken thighs in place of breasts.
- For a kick of heat add sliced jalapenos.
- Add classic pot roast veggies like potatoes and carrots to the recipe for a one-pot meal.
To Shred or Not to Shred
Either is really great with this recipe. If you choose not to shred it, serve it with mashed potatoes or any of your other favorite vegetable sides. If you choose to shred it, serve it on a bun with provolone cheese. It makes a great sandwich or is delicious when served over a bed of rice or mashed potatoes.
What to Serve with Slow Cooker Mississippi Chicken
This recipe is basically the same as the pot roast version, and although it’s made with chicken, the sides you can serve with it are still the same. Try sides like:
- Rice
- Mashed potatoes
- Roasted potatoes
- Carrots
- Green beans
- Asparagus
- Brussel sprouts
- Casseroles
- Bread

I made this tonight, and followed the directions. It was extremely salty. After I shredded the chicken, I put it back in the juice. Maybe thats where I screwed up as It absorbed all the juice and I didn’t have any gravy. I added more water, plus some of the water from the potatoes i boiled for mashed potatoes. It did take some of the saltiness away. If I were to make it again, I’d use maybe 1/4 cup of the pepperocini juice and 3/4 cup water.
I. Love. All chicken recipes I cant wait to try this .it looks delicious
Thank you Mary, I hope you enjoy it as much as we do. :)
Does the pepperoncini make it spicy?
Hi Tina, I personally don’t think so. Jalapenos are spicier, if that helps. :)
