Ingredients
  

Snickerdoodles

  • 2 ¾ cups all purpose flour
  • 2 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup butter, room temperature
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • 1 egg yolk

Cinnamon Sugar

  • 3 tablespoons sugar
  • 3 teaspoons cinnamon

Instructions
 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Set aside.

Snickerdoodles

  • In a large mixing bowl, cream the butter, granulated sugar, and light brown sugar.
  • Add egg and egg yolk and beat until incorporated.
  • Now, add flour, cream of tartar, baking soda, pumpkin pie spice and salt. Mix until combined.

Cinnamon Sugar

  • In a small bowl, stir together sugar and cinnamon.
  • Using a 1 ½ inch cookie scoop, roll dough into balls, roll in the cinnamon sugar mixture, and place on the prepared baking sheet.
  • Bake in the preheated oven for 8-10 minutes, or until edges start to brown.
  • Remove from the oven, let cool on the baking sheet for 3-4 minutes before transferring to a wire cooling rack.
