Then, I cook it all in a large skillet until the meat is cooked and the vegetables are tender. Then, I combine it with pinto, kidney, and black beans, along with classic chili spices and a zesty kick with Cajun seasoning, and cook it all in my slow cooker with diced tomatoes and enchilada sauce to create a Tex-Mex dish that’s heavy on the Mex and oh, so good.

Step 2: Cook the Meat and Vegetables
Cook the ground beef, Italian sausage, onions, bell pepper, jalapenos, and the seasonings over medium heat in a large skillet until the meat is no longer pink, and the vegetables are tender. Drain the excess grease.
Step 2: Add Everything to the Crock Pot
