This slow cooker chuck roast with vegetables is a hearty comfort food recipe that is loaded with tender beef, and vegetables is seasoned perfectly with a delicious gravy. An easy slow cooker recipe the whole family will enjoy.

Pot roast is one of the most iconic family dinners you’ll find anywhere in the United States. From the southern border to the north, the west coast to the east, almost everyone in the US, and in many places abroad for that matter, pot roast is served on family dinner tables all the time. For years, I made it in the oven just like my mom did. Then, slow cookers started to be made in larger and larger sizes. Now, if anything lends itself to being made in the slow cooker, it’s pot roast.

I’ve been making chuck roast in the slow cooker for years. It cooks down to tender, juicy perfect just like it does in the oven, but I don’t have to put in nearly the amount of effort. I simply set myself up, and leave the slow cooker to do its work until I’m ready to serve it in the evening. When my kids lived at home, it was one of my go-to recipes to get a meal on the table and not waste a ton of time. Now that they’re all moved out, I still make it. It’s great for leftovers, and again, it’s so easy.

Slow Cooker Chuck Roast with Vegetables

This slow cooker chuck roast cooks up perfectly thanks to being cooked low and slow for hours in the slow cooker. It’s paired with all of our traditional pot roast veggies like potatoes, carrots, celery, onions, and garlic to make a hearty, delicious family dinner that everyone loves. I make mine even more delicious and deeply flavored with the addition of beefy onion soup mix. Oh, it’s so good, and you can’t beat how simple it is to make.

  • Place the vegetables in the slow cooker first so everything cooks perfectly at the same time.

  • Use cream of celery soup in place of cream of mushroom.
  • Add parsnips for a delicious twist.
  • Add red pepper flakes for a nice kick of heat.

Do you have to brown a roast before putting it in the slow cooker?

You don’t have to. It will still be tender and delicious. However, it will add more flavor and a nice texture if you decide to take the time to brown it.

Should meat or vegetables go in the slow cooker first?

Always put your root vegetables in the slow cooker first. Those firm veggies will cook up perfectly as the meat on top cooks. By the time you’re ready to serve it, everything will be done to perfection.

Can you overcook chuck roast in a slow cooker?

Believe it or not, you can. You might think that longer is better, but at a certain point, continuing to cook the chuck roast will either make it mushy or actually toughen it up.

What is the difference between a Crockpot and a slow cooker?

Absolutely nothing. Crockpot is simply a brand of slow cooker.

Can you freeze leftover pot roast?

Absolutely! Allow the pot roast to chill completely. Then, place it in an air-tight, freezer-safe container and freeze it for up to 3 months.

How to Store and Reheat Leftover Slow Cooker Chuck Roast

You can store this chuck roast in the refrigerator in an air-tight container for up to 5 days. For longer storage, you can freeze it in a freezer-safe, airtight container for up to 3 months.

To reheat this roast, simply place it back in the slow cooker on high for a couple of hours to heat through.

How to Make Slow Cooker Chuck Roast

Making this recipe couldn’t be easier. It only takes a few minutes of prep, and then the hardest part comes next – waiting for it to finish slow cooking!

Step 1: Prep

Spray a 6 or 8-quart slow cooker with nonstick spray or line it with a liner.

Step 2: Add the Ingredients

Add the potatoes, carrots, celery, onions, and garlic to the bottom of the slow cooker. Then, place the roast on top. Finally, sprinkle with the soup and brown gravy mixes and pour the cream soup over all.

Step 3: Slow Cook

Cover and cook the chuck roast on high for 6 hours or on low for 8 to 10 hours. Place on a serving platter with vegetables. Salt and pepper, to taste, and enjoy.

Ingredients
  

  • 3 pound beef chuck roast
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 large potatoes peeled, cut into chunks
  • 4 carrots peeled, sliced into 1 inch chunks
  • 3 stalks celery sliced
  • 1 teaspoon black pepper
  • 1 teaspoon Slap Ya Mama seasoning
  • ½ teaspoon red pepper flakes
  • 22.5 ounce can cream of mushroom soup
  • 2 packets Lipton® beefy onion dry soup mix
  • 1 packet brown gravy
  • 1 cup beef broth

Instructions
 

  • Using an 8 quart slow cooker, spray with a non-stick cooking spray or use a liner.
  • Add onions, garlic, potatoes, carrots, celery to the bottom of the slow cooker.
  • Place meat on top of the vegetables.
  • Sprinkle with seasonings, add both beefy onion soup mix and grown gravy packets followed by cream of mushroom soup and beef broth.
  • Cover and cook on high for 6 hours or low for 8-10 hours.
