Mashed Potato Stuffing Bites Recipe

With Thanksgiving fast approaching, these mashed potato stuffing bites are super delicious. The savory flavor of the stuffing combined with mashed potatoes, rolled into bite-sized balls, coated, then fried to a golden brown and served with country gravy or turkey gravy makes for one delicious Thanksgiving appetizer recipe. Crispy on the outside, savory on the inside. Talk about scrumptious. These are delicious!

Mashed Potato Stuffing Bites are crispy bites of savory stuffing and mashed potatoes fried to perfection.

These are also great to make using leftover stuffing and mashed potatoes or just when a craving hit for mashed potatoes and stuffing. We always have plenty of leftovers. Not only leftover turkey, but leftover mashed potatoes, stuffing and pretty much everything else because I cook for an army. That is no joke either. I always find the biggest turkey just so we can have leftovers. This is how I look at it, if you are going to make such a huge Thanksgiving dinner, there might as well be plenty enough leftover to enjoy throughout the week.

Stove Top Stuffing Recipes

For this easy recipe, we used Stove Top® Stuffing Mix. We wanted something quick and easy, and these mashed potato stuffing bites are definitely super simple. A delicious Thanksgiving appetizer recipe that can be served prior to Thanksgiving dinner or can be made with the leftovers the day after.

What To Make With Leftover Mashed Potatoes

So if there are any leftover mashed potatoes when everything is said and done, these are a delicious little snack to make. We always have boxes of stuffing mix in the pantry so making these little bites can be a breeze any time throughout the year.

How To Make Mashed Potato Stuffing Bites

  • Cook the stuffing according to the package directions. Set aside.
  • Add potatoes to a large pan and cover with water. Bring to a boil and cook until soft. Drain and return the potatoes to the pan.
  • Add butter, milk, garlic salt, salt, pepper and mash.
  • Using three separate bowls, add flour to the first bowl, whisk buttermilk and egg in the second bowl and add bread crumbs to the third bowl.
  • Grab equal amount of stuffing and mashed potatoes (about a tablespoon total) and roll into a ball. Place on a baking sheet and continue until all the balls have been formed.
  • Roll each ball into the flour, then the buttermilk mixture and finally in the bread crumbs.

  • In a cast iron pan or large frying pan, heat oil to 350°.
  • Place about 8 -10 balls into the pan and fry until golden brown on all sides.
  • Remove and place on plate lined with paper towels.
  • Serve with gravy.

Ingredients
  

  • 1 box Stove Top® Turkey Stuffing
  • 2 large Russet potatoes (Costco size), peeled, cubed
  • 1/2 cup butter
  • 1/4-1/3 cup milk
  • 1 tsp garlic salt
  • salt and pepper, to taste
  • 2 cups Panko® bread crumbs
  • 1 cup all purpose flour
  • 1 cup buttermilk
  • 1 egg
  • 2+ cups vegetable oil

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
