The Best Mashed Potatoes

Today was a meatloaf and mashed potatoes kind of day. These are the best mashed potatoes ever. The other day I had made my crock pot pork with mashed potatoes. There was not even enough left over so I made them again today. Yum!

The Best Mashed Potatoes

Take your basic mashed potato recipe and change up the ingredients a bit and you will have the best mashed potatoes ever. You can even add cheese, bacon, garlic and end up with loaded mashed potatoes for a meal in itself.

Adding the cream cheese to these potatoes gives them such a creamy texture, which tastes amazing! Just boil the potatoes until they are soft, drain the water, add the potatoes back to the pan. Add butter, cream cheese and evaporated milk. Mix with an electric mixer until desired consistency is obtained. Season with salt and pepper to taste. Scoop out a big spoonful, plop it on your plate, add some green onions, chives and whatever else you love on your mashed potatoes. Then enjoy!

Ingredients
  

  • 3 potatoes peeled, cubed (Costco® size taters)
  • ½ stick of butter
  • ¾ cup evaporated milk
  • 4 oz cream cheese
  • Salt and pepper to taste

Instructions
 

  • In a medium sauce pan, add potatoes, cover with water.
  • Cook potatoes until soft.
  • Drain water and put potatoes back in pan.
  • Add butter, evaporated milk, and cream cheese.
  • Mash potatoes to desired creaminess.
  • Add salt and pepper to taste.
