Crock Pot Cheesy Chicken Red Beans and Rice

This crock pot cheesy chicken red beans and rice is a delicious comfort meal that tastes great, is hearty, loaded with cheese, and super easy to make.

The cheese mixed with the red beans and rice, along with the chicken, makes for one scrumptious meal, plus it’s made in the crock pot which is even better.

This slow cooker meal is ideal for those busy days when fixing dinner in the evening is too hectic. Using the crock pot is ideal and this crock pot cheesy chicken red beans and rice is perfect for those busy nights. Place the onions, then chicken, cheese, soup, red beans and rice, chicken broth into a crock pot, cook for 6-8 hours, and that’s it. Season and enjoy. Super easy, super delicious.

Ingredients
  

  • 2 large chicken breasts, boneless, skinless
  • 1 onion, large, chopped
  • 4 slices Three Alarm Cheese, cut thick (from Sam's Club®) or use your favorite cheese
  • 1 10 oz can cream of mushroom soup
  • 12 oz box Zatarain's Red Beans and Rice®
  • 32 oz chicken broth
  • Salt and pepper to taste

Instructions
 

  • Spray a 6 quart crock pot with non stick spray and turn to high.
  • Add onions to bottom of crock pot.
  • Place chicken breasts on top of onions.
  • Season with salt and pepper.
  • Add cheese to the top of chicken and then spoon soup on top to cover. 
  • Next, add red beans and rice and chicken broth. 
  • Cover and cook for 6-8 hours on high, 10-12 hours on low.

Two slices of breakfast pizza on a white plate.
6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
A wire rack with 15 iced oatmeal cookies on it.
