This barbecue pork roast is very flavorful and super creamy. What I love the most about using a crock pot is the simplicity of making a meal! Put in the roast, season with garlic salt, salt and pepper. Pour the barbecue sauce on top of the meat. Next add the soup on top of the sauce and that’s it. Cover, turn on and forget about it! After 6+ hours or so, you will be serving a delicious tasting pork roast that has a creamy barbecue flavor.

I don’t know about you, but I cannot wait for Fall to get here! SoCal has been through a lot lately, especially where I live! We’ve had multiple fires, and almost being evacuated from the latest fire we just went through. The drought we have been having FOREVER! I’m so looking forward to the cooler weather, the changing colors of the leaves, the smells from our wood burning stove, and the delicious smells of fall that are going to happen in my kitchen shortly! ;)

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
