Cherry Cream Cheese Puff Pastry

This cherry cream cheese puff pastry recipe is incredibly delicious. Loaded with a fresh Homemade Cherry Filling, a delicious and creamy cream cheese mixture, all stuffed between a three layer flaky puff pastry. And then… dusted with powdered sugar, drizzled with chocolate, topped with cool whip and finally a cherry to finish it off. Talk about scrumptious!

The flaky puff pastry is perfect for this dessert. As you bite into these delicious pastries, the flakiness of the pastry, when mixed with the cherry filling and cream cheese mixture, along with a bit of chocolate, tastes incredible. Cherries and cream cheese go hand in hand and then adding in some dark chocolate… heaven!

How To Make Homemade Cherry Filling

  • Rinse, half and remove pits from cherries.
  • Add cherries, sugar, water and lemon juice to a medium saucepan.
  • Heat to boiling and then let boil for about 4-5 minutes.
  • Mix water and corn starch together and add to cherry mixture.
  • Stir until thickened and remove from heat. Let cool.

How To Make Cream Cheese Filling

  • Beat cream cheese for 2 minutes, then add sugar and beat until combined.
  • Add lemon juice, vanilla and beat until well incorporated.

How To Make Cherry Cream Cheese Puff Pastries

  • Cut the pastry into 3 strips and then cut each strip into four for a total of 12 pieces.
  • Place each piece on the prepared baking sheets and bake in the oven at 400° for 17 minutes.
  • While the puff pastry is baking, gently mix equal parts of the cherry filling with equal parts of the cream cheese mixture together.
  • After the puff pastries bake, remove the baking sheet from oven, and once pastries have cooled, carefully separate one pastry at a time into 3 layers.
  • Add a little cherry cheese mixture to the bottom layer, then put the middle pastry layer back on, add a little cherry cheese mixture and then place the top pastry back on.
  • Continue until all pastries have been filled.
  • Sprinkle with powdered sugar, drizzle with melted chocolate, add a spoonful of cool whip topping and top with a cherry, then enjoy!

Ingredients
  

  • 1 box frozen puff pastry

For The Homemade Cherry Filling

  • 2 1/4 cups fresh cherries, halved, pitted
  • 1/3 cup sugar
  • 1/3 cup +3 Tbsp water
  • 2 tsp lemon juice
  • 2 Tbsp corn starch

For The Cream Cheese Filling

  • 8 oz cream cheese, room temperature
  • 1/3 cup sugar
  • 1 tsp lemon juice
  • 1 tsp vanilla

Optional

  • Powdered sugar
  • Chocolate wafer, melted
  • Cool Whip
  • Whole fresh cherries

Instructions
 

  • Preheat oven to 400° and line a baking sheet with parchment paper. Set aside.

For The Homemade Cherry Filling

  • In a small sauce pan add cherries, sugar, water and lemon juice.
  • Cook over low/medium heat and bring to a boil.
  • Let cherries boil for about 4-5 minutes, stirring occasionally.
  • Mix 3 tablespoons of water with corn starch and add to pan.
  • Once cherry mixture has thickened, remove from heat and let cool.

For The Cream Cheese Filling

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
