Lemon Blueberry Poke Cake Recipe
This lemon blueberry poke cake is super lemony, uses my easy blueberry filling and then frosted with a delicious lemon cream cheese frosting. This poke cake recipe is super refreshing and one that will be requested over and over.
The blueberry filling is made with fresh blueberries. But when blueberries are not in season, I use my frozen blueberries which I froze when they were in season. Blueberries are one of my favorite fruits and when paired up with anything lemon, it’s heaven. Lemon and blueberries, what a delicious combination.
Lemon Poke Cake With Blueberry Filling
Making this lemon blueberry poke cake is easy. Start out my making the lemon cake according to package directions. Once the cake has finished baking, poke a lot of holes throughout the cake with the end of a wooden spoon so the blueberry filling can make its way down the holes. A little extra help from you will be needed to get the filling down into the holes.
Moist Lemon Cake
It’s super easy and how I manage to fill the holes is by spreading the filling over the top and gently poke the filling down into the holes that have already been made. I use the wooden spoon again. It’s not hard and as you go along, you will be able to tell where the holes are. Believe me, this is so worth the extra effort.
Cover the cake with plastic wrap and place in the fridge to chill once the blueberry filling has been added. Make the lemon cream cheese frosting and once the cake has chilled, frost the cake. Chilling the cake first makes spreading the frosting onto the blueberries a lot easier and less messy.

Top with additional blueberries and a little lemon slice for an added touch. This is a delicious cake that everyone will love and want again. With the fresh blueberry filling and the lemon cream cheese frosting, this is one delicious cake.
Even in the middle of winter this cake can be made. I used the blueberries that I had frozen during the summer. The frozen blueberries do not look as nice but they tastes just as good. So make sure to stock up on blueberries when they are in season and freeze some for delicious desserts like this. That way, this lemon blueberry poke cake can be made anytime of the year.

Lemon Blueberry Poke Cake
Ingredients
For The Lemon Cake
- 1 box Lemon Supreme cake mix, (I used Duncan HInesĀ®)
- 1 cup water
- 3 large eggs
- 1/3 cup vegetable oil
For The Blueberry Filling
- 3 cups blueberries, divided
- 1/3 cup sugar
- 3 tsp lemon juice
- 7 Tbsp water, divided
- 2 Tbsp corn starch
For The Lemon Cream Cheese Frosting
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2 tsp lemon juice
- 2 tsp lemon zest
- 3 cups powdered sugar
Instructions
For The Lemon Cake
- Make lemon cake according to package directions and once removed from the oven, poke holes throughout the top of the cake with the end of a wooden spoon.
- While cake is baking, make the blueberry filling.
For The Blueberry Filling
- Heat a saucepan over low/medium heat.
- Stir 2 cups of blueberries, sugar, lemon juice, 3 tablespoons water into pan and bring to a boil.
- Let boil for 3-4 minutes, then add remaining 1 cup of blueberries. Stir.
- In a small bowl, mix 4 tablespoons water and corn starch together. Add to blueberries and stir.
- Continue cooking until sauce thickens. Remove from heat and let cool.
- Once cooled, spread onto the top of the cake and, using the end of a wooden spoon, gently poke the filling into the holes that were previously made.
- Cover with plastic wrap and place in fridge to chill (this makes frosting the cake over the blueberries easier if the cake has been chilled).
For The Lemon Cream Cheese Frosting
- In a medium mixing bowl, mix cream cheese, butter and lemon juice until light and fluffy. Stir in lemon zest. Gradually add powdered sugar, one cup at a time, until desired consistency is obtained.
- Frost chilled cake and garnish with lemon slices and blueberries. Enjoy!
