S’mores Blondies

If you love everything about classic campfire desserts, these S’mores blondies are about to become your new obsession. They’re soft, chewy, loaded with chocolate chips, and topped with perfectly toasted marshmallows and a drizzle of chocolate sauce. You don’t even need a campfire!

How to Make S’mores Blondies

Step 1: Whisk the melted butter and sugar. Then add the eggs and vanilla, whisking until smooth.

Step 2: Gently mix in the flour until just combined. Then, fold in the chocolate chips.

Step 3: Spoon the batter into a prepared 8×8 glass baking dish or a brownie tin, and bake until a toothpick comes out clean.

Step 4: Cool the blondies for a few minutes. Then, transfer them to a wire rack.

Step 5: Cut the marshmallows in half and place one on each blondie, cut-side down.

Step 6: Bake again until the marshmallows are melty. Drizzle with chocolate sauce and enjoy.

Ingredients
  

  • 1 cup packed brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • ¾ cup butter
  • 1 tablespoon vanilla extract
  • 1¾ cup all purpose flour, sifted
  • ¼ teaspoon salt
  • ½ cup mini chocolate chips
  • 6 large marshmallows, cut in half

Instructions
 

  • Preheat the oven to 350°.
  • In a large microwave safe bowl, heat the butter in the microwave until melted.
  • Add the brown sugar and granulated sugar to the melted butter and whisk until creamy.
  • Add the eggs and the vanilla. Whisk until the mixture becomes smooth.
  • Fold in flour and salt. Batter will be slightly lumpy. Do not overmix.
  • Gently fold chocolate chips into the mixture.
  • Spoon blondie batter into a prepared brownie tin, or an 8×8 glass pan.
  • Cook for 20 minutes or until golden on the edges and the center is set. Check for doneness when a toothpick inserted in the center comes out clean.
  • Remove from the oven and let cool slightly.
  • Turn the oven to 400°.
  • Once Blondies are cool enough to remove from the pan, place them on a baking sheet.
  • Cut the jumbo marshmallows in half.
  • Place a marshmallow on top of each blondie, cut side down.
  • Return to the oven until the marshmallows have browned, about 5 minutes.
  • Drizzle with chocolate sauce, and serve immediately.
