Oven roasted to perfection, these mini Parmesan baked potatoes are sure to be a hit.

Parmesan Garlic Roasted Baby Potatoes

Potatoes are a classic side dish. They are inexpensive to make, filling and nutritious. Usually, even the fussiest eaters love potatoes. Since it is easy to give potatoes a lot of flavor, this recipe for Mini Baked Parmesan Potatoes are packed with flavor and tastes amazing. You could even add minced garlic to the recipe and it would turn these baby potatoes into oven roasted garlic Parmesan potatoes.

What Kind of Potatoes are Best for Parmesan Potatoes

While you can use any kind of mini or small potato, I suggest using Classic Baby Creamers® potatoes. I like that these mini potatoes are just the right size and have the perfect texture for oven roasting like this. If you do not have mini potatoes, you can use regular baking potatoes. You will need to cut them down into smaller pieces. You can also use red potatoes. Changing the type of potatoes will change the taste of the recipe slightly because each type of potato has its own flavor.

How to Store Parmesan Baked Potatoes

Once the potatoes have cooled, you will want to store these potatoes in an airtight container in the refrigerator. If you are worried about condensation taking the crispiness away from these potatoes, you can also add a layer of paper towel on the bottom of the container and on the top of the potatoes. This will help capture the moisture and keep it from the potatoes. The potatoes will last about 3 to 4 days in the refrigerator.

When you are reheating these potatoes, there are a few ways you can do it. You can reheat the potatoes in the oven. This is the best way to reheat the potatoes easily and to keep the crispiness that the potatoes had when you first baked them. You can reheat them in a skillet on the stovetop. This can give the crispiness as well, but it requires more attention from you to make sure they are heated through without burning. You can also reheat the potatoes in the microwave. This will not give you the crispiness but it is the easiest and quickest way to reheat the potatoes.

Ingredients For Mini Parmesan Baked Potatoes

  • Classic Baby Creamers® potatoes
  • Grated Parmesan cheese
  • Olive oil
  • Garlic salt
  • Pepper
  • Cajun seasoning

How To Make Baked Parmesan Mini Potatoes

  1. Start out by washing the potatoes, then slicing each potato in half and place in a large bowl combined with oil Stir to coat.
  2. Using a gallon size baggie, add grated Parmesan cheese, garlic salt, pepper and seasoning. Seal and shake to mix.
  3. Add a handful of potatoes at a time into the cheese mixture and seal the baggie. Shake to coat.
  4. Remove potatoes and place (cut side down) in a single layer on a baking sheet that has been sprayed with a non stick spray.
  5. Place in a preheated 400° oven and bake for approximately 50 minutes, or until fork tender, turning once during baking.
  6. Remove from oven and enjoy with your favorite dipping sauce.

Ingredients
  

  • 45-50 Classic Baby Creamers® potatoes, washed, cut in half
  • 2 Tbsp olive oil
  • 1 1/4 cup Parmesan cheese, grated (green container)
  • 1 Tbsp garlic salt
  • 1 tsp pepper
  • 1 tsp Cajun seasoning

Instructions
 

  • Preheat oven to 400 degrees and spray a baking sheet with non stick spray.
  • Wash and pat dry potatoes, then slice each potato in half and place in a large bowl combined with oil. Stir to coat.
  • Using a gallon size baggie, add grated Parmesan cheese, garlic salt, pepper and seasoning. Seal and shake to mix.
  • Add a handful of potatoes into cheese mixture, seal baggie and shake to coat.
  • Remove and arrange potatoes cut side down, and place potatoes in a single layer on a baking sheet that has been sprayed with a non stick spray.
  • Bake for approximately 50 minutes, or until fork tender, turning once during baking.
  • Remove from oven and enjoy with your favorite dipping sauce.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
