Baked Potato Appetizers
Tasty, cheesy and loaded with avocado and bacon, these avocado bacon potato bites are a favorite at our house. Anything with avocados, potatoes and of course bacon, is always a welcomed addition to the menu.
Red Potato Appetizers
This appetizer would also be great using red potatoes as well. Start off by slicing the potatoes about 1/4 inch thick then place into a large baggie. Add garlic salt, salt and pepper, seal and shake to coat.
Remove and place the potatoes in a single layer onto a baking sheet that’s been sprayed with a non stick spray. Place in the oven and bake for about 20 minutes or so, turning half way through.
While the potatoes are baking, fry the bacon until crispy. Place cooked bacon on a plate lined with paper towels to absorb the excess grease. When cool enough to handle, crumble the bacon and set aside.
Bite Size Appetizers
Next, slice each avocado and remove the seed from each. Dice and place in a medium bowl. Add salsa, onions, garlic salt and bacon, keeping a little bit of bacon crumbles for garnish. Now it’s time to enjoy these delicious bite size avocado bacon potato bites. We hope you love them as much as we do.

- 2 potatoes, rinsed, sliced 1/4" - 1/2" thick
- 2 Tbsp olive oil
- 1 tsp garlic salt
- 1 tsp salt
- 1 tsp pepper
- 2 large avocados, pitted, diced
- 1 heaping Tbsp salsa
- 1 Tbsp red onions, chopped
- 1 tsp garlic salt
- 3 slices bacon, crispy, crumbled
- 1/2 cup cheddar cheese, grated
Preheat oven to 400° and spray a baking sheet with a non stick spray.
Rinse and scrub potatoes then slice about 1/4 inch thick.
Place into a resealable baggie and add olive oil, garlic salt, salt and pepper. Seal and shake to coat.
Place on prepared baking sheet and pop in the oven for about 20 minutes, turning halfway through.
In a medium mixing bowl, add diced avocados, salsa, red onions, and bacon. Gently stir to combine.
To assemble, remove potato rounds from baking sheet and place on a serving tray.
Sprinkle a little grated cheese on each potato and after cheese melts a bit, add a teaspoon or so of avocado mixture on top of the cheese.
Garnish with a few pieces of crumbled bacon and enjoy.
