Bacon Wrapped Stuffed Jalapeños

These bacon wrapped stuffed jalapeños, sometimes called Grasshoppers, are a perfect appetizer loaded with cream cheese, grated cheese, onions and cilantro, then wrapped in bacon and roasted to perfection. Great served at dinner parties, game-day celebrations, and family gatherings.

Look at these delicious peppers all wrapped in bacon then roasted until the bacon is crispy and the filling is hot and bubbly. So good!

Perfect appetizer for the Super Bowl

Start out by frying up 8 pieces on bacon just until they start to get crispy then remove and place on a plate lined with paper towels until ready to assemble. Slice off a thin layer lengthwise on the jalapeño and then spoon out and remove the seeds. Rinse each pepper and rinse out any remaining seeds, dry and place on a baking sheet.

Now it’s time to make the cream cheese filling. So basically, beat the cream cheese and then add grated cheese, sliced onions and cilantro. Mix until everything is well incorporated and then spoon cheese mixture into each jalapeño.

Once each pepper is filled, wrap each one with a slice of bacon. Using tooth picks to hold in place, place the jalapeños back on the baking dish and pop in the oven. Roast until bacon is crispy and cheese filling is nice and bubbly, about 20 minutes.

Ingredients
  

  • 8 large Jalapeños, seeds removed
  • 8 oz cream cheese, softened
  • 1 1/2 cups cheese, grated (I used Three Alarm Cheese from Sam's Club)
  • 1/4 cup green onions, sliced
  • 1/8 cup cilantro, chopped
  • 8 slices bacon

Instructions
 

  • Preheat oven to 350°
  • Fry bacon in a large frying pan just until it starts to get crisp. Remove and place on a plate lined with paper towels. 
  • Slice just a little off the top, lengthwise, of each jalapeños, spoon out the seeds and hollow out the pepper. Rinse jalapeños and any loose seeds that may remain.
  • Dry jalapeños and place on a baking sheet. 
  • In a medium mixing bowl, beat cream cheese for 2 minutes, then add grated cheese, onions, cilantro.
  • Spoon cheese mixture into each jalapeño and place back on baking sheet.
  • Wrap bacon around each pepper and secure with a couple of tooth picks
  • Pop in the oven and bake for 18-20 minutes.
  • Remove from oven and enjoy!

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
