Bacon Wrapped Potato Wedges

Here’s a simple potato appetizer recipe that is super easy and tastes so good. If you love bacon (and who doesn’t), you are simply going to love these easy bacon wrapped potato wedges.

Even the simplest of appetizers, these potato wedges wrapped in bacon, are always a hit. Your tastes buds will be in heaven when the crispness of the bacon, mixed with the creaminess of the seasoned potato wedges, mesh together in your mouth.

Then to top it off, when these wedges are dipped in your favorite sauce they taste even more delicious. We dipped our potato wedges in chipotle mayo. SO YUM! When these are sitting on the table with the other appetizers, trust me, they will be gobbled up quickly.

All that needs to be done to make these tasty spuds is to cut each potato into wedges, season them just right, and then wrap bacon around each wedge from end to end. Place on a baking sheet and pop em’ in the oven. An easy peasy appetizer that’s perfect for game day parties, family gatherings or just when a craving for bacon or potatoes hits.

Ingredients
  

  • 2 potatoes, washed, cut into 8 wedges
  • 12+ strips bacon
  • 2 Tbsp olive oil
  • 1 tsp garlic salt
  • 1 tsp salt
  • 1 tsp pepper

Instructions
 

  • Rinse potatoes and slice each potato in half, lengthwise, then slice each half lengthwise again making until there are 8 wedges per potato.
  • Place wedges in a large resealable baggie. Add olive oil, garlic salt, salt, pepper, seal and shake to coat. 
  • Remove from baggie and wrap bacon around each potato wedge starting at one end and ending at the other. If bacon is too long, cut and use for remaining wedges. 
  • Place on baking sheet that has been generously sprayed with a non stick spray and pop in the oven on 400° for 40 minutes or until bacon is crispy and potatoes are tender, turning after 20 minutes. 
  • Remove from oven and enjoy with your favorite dipping sauce.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
