Blueberry Lemon Crumb Bars

These blueberry lemon crumb bars are bursting with fresh blueberries, have a delicious crumb topping and is a great summer dessert everyone will enjoy.

Blueberry Lemon Crumb Bars are loaded with fresh blueberries and lemon, then topped with a crumb topping.

Easy Blueberry Bars

Blueberries are such a delicious fruit and can be used in so many different recipes. These blueberry lemon crumb bars are super easy to make using fresh, juicy blueberries. Takes all of about 20 minutes to put together. Super easy, super delicious.

Blueberry Lemon Crumb Bars are loaded with juicy, fresh blueberries lemon juice and zest, then topped with a crumb topping.

Lemon Blueberry Desserts

Lemon and blueberry are a favorite combination with me and I can never get enough of these two delicious flavors. They just go so well together and if you love blueberries, and lemons, you are going to flip over these delicious crumb bars.

These Blueberry Lemon Crumb Bars are loaded with juicy blueberries lemon juice and zest, with a crumb topping.

How To Make Blueberry Lemon Crumb Bars

  • Preheat oven to 375° and right before adding crumb mixture, spray a 9 x 13 baking dish with a non stick spray.
  • Start out by adding blueberries, sugar, corn starch, lemon juice and zest to a medium mixing bowl.
  • Stir occasionally and set aside. In a large mixing bowl, whisk flour, sugar, brown sugar, baking powder, salt and cinnamon together until combined.
  • Using a pastry blender or a fork, cut butter into flour mixture until crumbly.
  • In a small bowl, whisk egg and vanilla together and add to flour mixture once butter has been added and mixture is crumbly.
  • Continue using pastry blender until combined.
  • Remove half of crumb mixture (approximately 3 cups) and press into prepared baking dish.
  • Stir blueberries and then add to the top of the crumb mixture.
  • With the remaining crumb mixture, squeeze with hands to combine as the crumb mixture is crumbled over blueberries.
  • Place in the oven uncovered and bake for approximately 45 minutes or until crumb topping is slightly browned.
  • Let cool completely before cutting into squares.

Ingredients
  

For The Blueberry Lemon Filling

  • 4 1/2 cups fresh blueberries
  • 1/2 cup sugar
  • 5 tsp corn starch
  • 2 Tbsp fresh lemon juice
  • zest from one lemon

For The Crumb Bars and Topping

  • 3 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 3/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup butter
  • 1 tsp vanilla
  • 1 egg

Instructions
 

  • Preheat oven to 375° and right before adding crumb mixture, spray a 9 x 13 baking dish with a non stick spray. 

For The Blueberry Lemon Filling

  • In a medium mixing bowl, whisk sugar and corn starch together.
  • Add blueberries, zest from lemon and fresh lemon juice. Stir and let sit while making the crumb bars dough, stirring occasionally.

For The Crumb Bars and Topping

  • In a large mixing bowl, whisk flour, sugar, brown sugar, baking powder, salt and cinnamon together until combined. 
  • Using a pastry blender or a fork, cut butter into flour mixture until crumbly. 
  • In a small bowl, whisk egg and vanilla together and add to flour mixture once butter has been added and mixture is crumbly. Continue using pastry blender until combined. 
  • Remove half of crumb mixture (approximately 3 cups) and press into prepared baking dish. 
  • Stir blueberries and then add to the top of the crumb mixture.
  • With the remaining crumb mixture, squeeze with hands to combine as the crumb mixture is added over blueberries.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
