Let’s be honest with one another. How many times have you went to the store and bought bananas with the best intentions of actually eating them before they ripen beyond reprieve? If you’re anything like me, this just might be the story of your supermarket life.
It’s like the bananas literally ripen in a matter of seconds when we’re not paying attention…and then when we remember them, they’re way past prime and it almost feels as though they’re happy that they’re no longer enjoyable.
But now, this banana recipe literally “takes the cake”. You never have to worry about what to do with too ripe bananas ever again!
Can I use store-bought cream cheese frosting instead of homemade?
Of course. I love my homemade cream cheese frosting recipe but if you’re running short on time, buy some from the store and use it instead. The taste may vary slightly, but I really doubt it.
If you do buy the frosting from the store, try and get the one that is whipped. It’s just such a smoother spread on the cake and has such a nice, airy texture!
Is it possible to make this as a sheet cake instead of a layered cake?
It is. You’ll just need to make certain that you use the appropriate pan (spray it first so the cake doesn’t stick) and pour in the batter. The tricky part will be to make certain that it doesn’t burn in the oven. I would make certain to watch it very closely. Once you notice that you’re smelling it, check it and see if it’s done.
How do you know when the banana bread cake is done cooking?
No matter what type of cake pan you use, the testing of the doneness is going to be the same. Once the timer goes off, grab a toothpick and stick it straight down into the middle of the cake. If when you remove the toothpick it comes out clean, that tells you that the cake is done.
However, if there is still batter on it, you need to leave it cooking in the oven for a few more moments. After a short time passes, get a fresh and clean toothpick and repeat until you get one that comes out clean.
Why is there sour cream in this cake recipe?
Good question! Consider it one of my “secret ingredients” when cooking. I actually add sour cream to most of my cake recipes and even some dessert bread too because it’s a simple way to add some extra moisture to the cake without altering the flavor or taste at all. (You can even use Greek yogurt if you don’t have sour cream. Just make certain that it’s not flavored like anything, though, or the cake will take on that taste!)
Just follow the directions on the amount to add so that you don’t overdo it.

- Preheat oven to 350° and right before filling, spray (2) 8 inch cake pans with non stick spray.
- In a large bowl, beat butter and sugar together until light and fluffy.
- Add eggs and beat until combined then beat in sour cream and vanilla.
- Next, add flour, baking soda and salt then beat just until combined.
- Stir in mashed bananas and mix until combined.
- Pour equally into prepared cake pans and bake for approximately 35-40 minutes or until toothpick inserted in the center comes out clean.

This is one of the best cakes I have ever made! The cake was moist and perfect banana flavor. I used 3 large bananas and was a bit short of one cup. I added 1/2 cup semisweet chocolate chips to the batter and sprinkled chopped pecans and chocolate chips around top of cake. Other than that, I followed recipe exactly. I baked for 35 minutes. The cream cheese frosting was so creamy and delicious . I will definitely make this cake again. Thanks for such a great recipe????????????
