Key Ingredients

See the recipe card at the bottom of the post for a full list of ingredients and their exact amounts.

A wood cutting board with all the ingredients placed on it to make sausage egg bites.
  • Breakfast Sausage: Adds a savory, hearty flavor and makes these egg bites filling enough for breakfast or meal prep.
  • Egg: Hold everything together and create the fluffy, protein-packed base.
  • Cottage Cheese: The secret ingredient that helps keep the egg bites moist and tender while adding extra protein.
  • Cholula Hot Sauce: Adds a subtle tang and gentle heat, boosting flavor without making the egg bites overly spicy.
  • Slap Ya Mama, Onion Powder & Garlic Salt: Give the bites a well-rounded, savory flavor.

Variations

  • Swap the Protein: Use ham or bacon for variations like these bacon cheesy egg bites.
  • Southwest Egg Bites: Add diced jalapenos, pepper jack cheese, and chopped bell peppers.
  • Veggie Egg Bites: Use spinach, mushrooms, and diced tomatoes.
  • Extra Cheesy: Mix in cheddar, mozzarella, or Monterey Jack cheese.
  • Lighter Version: Use turkey breakfast sausage and low-fat cheese.

How to Make Sausage Egg Bites

Step 4: Bake until the eggs are set and golden brown. Serve warm and enjoy!

Expert Tips

  • Egg bites continue cooking slightly after being removed from the oven. Pull them out once the centers are set.
  • Room-temperature eggs blend more easily and create a smoother texture.
  • Even non-stick pans benefit from a generous coating of cooking spray.
  • Allowing them to cool for a few minutes makes them easier to remove without breaking.

Sausage Egg Bites FAQs

Are sausage egg bites healthy?

Yes! These egg bites are high in protein, low in carbohydrates, and packed with satisfying ingredients that help keep you full longer. They’re a great option for breakfast, snacks, or post-workout meals.

Why did my egg bites stick to the muffin pan?

Be sure to generously spray the muffin tin with non-stick cooking spray. Silicone muffin pans or liners can also help prevent sticking.

How do I know when egg bites are done?

The centers should be set and no longer jiggly. The tops may be lightly golden around the edges.

Why were my egg bites rubbery?

Overcooking the egg bites will make them dry and rubbery. They continue cooking slightly after removal from the oven, so be sure to take them out as soon as they’re set.

How long do sausage egg bites last?

You can refrigerate them for up to 4 days in an airtight container. For longer storage, wrap them in plastic wrap and freeze in an airtight, freezer-safe container for up to 3 months.

How do I reheat sausage egg bites?

Microwave individual portions at 30-second intervals or bake at 350 until heated through.
