These cheesy egg bites are the perfect breakfast, whether you want a grab-and-go option or just something a little different. They’re packed with crispy bacon, cheddar cheese, jalapeños, and fluffy eggs for a protein-packed breakfast that’s both filling and incredibly delicious.

Step 4: Divide the mixture evenly among the prepared muffin cups and bake until set and the tops are golden. Serve warm.

Ingredients
  

  • 8 large eggs
  • 1 jalapeno, stem, seeds removed, diced
  • 2 green onions, chopped
  • ½ teaspoon minced onions
  • ½ teaspoon Slap Ya Mama seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt
  • 12 ounces bacon, crumbled
  • 1 cup sharp cheddar cheese, shredded
  • ¼ cup cottage cheese, small curd
  • 2 tablespoons milk
  • ¼ cup Picante sauce

Instructions
 

  • Preheat the oven to 350 degrees and spray a 12-count muffin tin with non-stick cooking spray.
  • Fry bacon until desired crispness is obtained. Set aside to cool, then crumble.
  • In a large bowl, whisk eggs until combined.
  • Add the seasonings and whisk until combined.
  • Next, add the diced jalapeno, chopped green onions, crumbled bacon, cheddar cheese, cottage cheese, milk, and Picante sauce. Stir to combine.
  • Pour into the prepared muffin tin and bake for 20 minutes.
  • Remove from the oven and enjoy.
