My cheesy egg bites packed with crispy bacon, cheddar cheese, jalapeños, and fluffy eggs for a protein-packed breakfast.

  • Preheat the oven to 350 degrees and spray a 12-count muffin tin with non-stick cooking spray.
  • Fry bacon until desired crispness is obtained. Set aside to cool, then crumble.
  • In a large bowl, whisk eggs until combined.
  • Add the seasonings and whisk until combined.
  • Next, add the diced jalapeno, chopped green onions, crumbled bacon, cheddar cheese, cottage cheese, milk, and Picante sauce. Stir to combine.
  • Pour into the prepared muffin tin and bake for 20 minutes.
  • Remove from the oven and enjoy.

Notes

Tips
  • Freshly shredded cheese melts more smoothly and gives the best texture.
  • Egg bites continue cooking slightly after removing from the oven, so avoid overbaking them.
  • Be sure to thoroughly coat the muffin wells, so they release easily.
  • Cool the bites for a few minutes before removing them to ensure they hold their shape.
