Why New York Strip Steak is Such a Winner
Everyone seems to love this cut of beef, and I think it’s because it’s got the best of everything. Filet mignon is the most tender cut of steak, but it also has the least flavor because of its low fat content. Other steaks have intense flavor, but their high fat content turns some people off. Then we have the strip. It’s like that person at the party that everyone loves to talk to because they always have a good time.
New York Strip is a sirloin steak. It comes from a place that’s still technically part of the loin, but it’s denser and has more fat and marbling. That combination leads to a cut of beef that is tender but still flavorful. Also, a lot of the fat on the strip is external fat that runs along the outside of the steak. So you can get all that flavor from the fat, but if you don’t love eating fat, you can simply cut it away.

Bring Steaks to Room Temperature
Before cooking your steak, it’s important to bring it to room temperature. Cooking your steak at room temperature ensures that you can get a perfectly done steak every time. This is especially important when cooking your steaks rare. If you start your steaks cold, you could end up with a steak that has a perfectly charred exterior and a cool interior. No one wants that!
Use Cast Iron if Possible
If you have a choice, cook your New York Strip Steak in a cast-iron skillet. Heavy cast iron holds heat extremely well and evenly distributes it. It also stands up to high temperatures. This makes it the perfect thing to cook your steak in. High heat can cause normal pans to warp over time and for their non-stick coating to begin to deteriorate. With cast iron, you can cook at high temperatures with no issues, allowing you to get a great sear on the outside of your steak.

Some people say you should only turn your steak once, but that’s not true. After you get a good sear on both sides to lock in the juices, it’s better to turn them every minute to cook them more evenly. I have always had the most perfect steaks when I’ve turned them every minute or so.
The best way to know when your steak is done is to use a meat thermometer. Various temperature readings will tell you when your steak is at its desired doneness. For your ease of cooking, I’ve put them below. The temperatures range from rare to well done (if you’re into that sort of thing).
- Rare: 120 – 130 degrees.
- Medium Rare: 130 – 135 degrees.
- Medium: 135 – 145 degrees.
- Medium Well: 145 – 155 degrees.
- Well Done: 155-165 degrees.
The key to this New York Strip Steak being so delicious is simplicity, but that doesn’t mean you can’t mix things up a bit. This recipe calls for pepper and garlic salt, but you can get creative with your seasonings if you like. For example, in addition to garlic salt and pepper, I’ll sometimes add onion powder, as well. If you like a bit of heat, add some red pepper. The sky’s the limit. Just remember to think about how the seasonings will pair with the flavor of the beef.

I like to pair my steak with mashed potatoes, baked potatoes, or rustic home fries. Potatoes are just such a classic steak side. When I plate up the steak, I don’t put anything on it except the melted butter that I used when cooking them. Some people like to add steak sauce, but for me, it takes away from the flavor of the steak. It’s all about personal preference, though! I have a friend who puts ketchup on her steak. You do you.

How To Cook The Perfect New York Strip Steak
- Remove steaks from the refrigerator and let them sit out at room temperature for 25-30 minutes.
- Season both sides of steaks with garlic salt and pepper making sure to rub the seasoning into the steak and then add a little more seasoning right before adding them to the pan.
- Using a cast iron pan, heat pan over high heat.
- Add olive oil and heat, then add steaks to hot pan.
- Sear steaks for about 1 minute then turn over and sear on the other side.
- Add butter to pan, melt and continue flipping the steaks every minute for even cooking.
- Spoon melted butter over steaks and cook until internal temperature reaches

- 4 New York strip steaks
- 2 tbsp olive oil
- 2 tsp course pepper
- 2 tbsp garlic salt
- ¼ cup butter, sliced
Remove steak from refrigerator and let sit out at room temperature for 25-30 minutes.
