How To Make Cheesy Enchilada Pasta
- Spray Instant Pot with a non stick spray.
- Press “Saute” and add ground beef, onions, garlic, and all spices and seasonings to Instant Pot.
- Cook ground beef until fully cooked and no longer pink.
- Add remaining ingredients to pot, except for cheese.
- Close, lock the lid, make sure “sealing” is chosen.
- Press “Manual” and “High Pressure” and set cook time for 5 minutes.
- Use quick release, open lid and add shredded cheese, stir.
- Serve warm and enjoy!

Stove Top Method
Brown lean ground beef, onions and garlic in a large saucepan over medium heat. Add seasonings, stir. Pour enchilada sauce, Rotel, pasta, olives and corn into pan, stir and turn heat to low/medium. Cook until pasta is done, about 15 minutes. Add both types of cheese, stir and serve. Top with sour cream, cilantro, green onions and enjoy.

Instant Pot Cheesy Enchilada Pasta
Ingredients
- 2 lbs ground beef
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tsp Slap Ya Mama® seasoning
- 1 tsp garlic salt
- 1 tsp pepper
- 1 tsp cumin
- 1/2 tsp crushed red peppers
- 2 15 oz cans red enchilada sauce
- ½ cup water
- 10.5 oz can Rotel®
- 4 oz can diced green chilies
- 6.5 oz can sliced black olives, liquid drained
- 15.25 oz can corn, drained
- 3 cups Rontini pasta, uncooked
- 2 cups sharp cheddar cheese, shredded
- 2 cups Monterey Jack cheese, shredded
Instructions
- Spray Instant Pot with a non stick spray.
- Press "Saute" and add ground beef, onions, garlic, and all spices and seasonings to Instant Pot.
- Cook and crumble until ground beef is no longer pink.
- Add remaining ingredients to pot, except for cheese.
- Close and lock lid, make sure "sealing" is chosen.
- Press "Manual" and "High Pressure" and set cook time for 5 minutes.
- Use quick release, open lid and add shredded cheese, stir.
- Serve warm and enjoy!
- Optional: top with sour cream, green onions, cilantro
