Crock Pot Spicy Beans with Rice

These crock pot spicy beans and rice are an easy weeknight meal that tastes yummy. Not only do they taste great but this is an easy crock pot recipe to throw together that the whole family will enjoy, plus it’s healthy.

Crock Pot Spicy Beans

If spicy is not your thing, just eliminate the jalapeños and the Cajun spice then you can still enjoy this delicious recipe. In addition, these beans can be used in burritos, tacos, or as a side dish to your favorite Mexican meal as well.

How To Make Crock Pot Beans and Rice

  1. Sort beans and remove any debris. Place beans in a large pot and cover with water 2 inches above the beans. Let soak overnight. Drain water.

  2. Lightly spray a 6 quart crock pot with a non stick spray.

  3. Add beans, onions, garlic, jalapeños, seasonings and broth to crock pot. Stir.

  4. Cover and let cook for 6-8 hours on high.

  5. Cook rice according to package directions.

  6. Serve beans over a bed of rice and top with sour cream, cilantro, green onions, optional.

Ingredients
  

  • 1 lb pinto beans, sorted, debris removed
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 jalapeños, seeds removed, chopped small
  • 1 tsp garlic salt
  • 1 tsp ground cumin
  • 1 tsp Cajun seasoning
  • 1 tsp black pepper
  • 1/2 tsp crushed red peppers
  • 10 oz can Rotel™
  • 32 oz vegetable broth
  • 4 cups cooked rice

      Hi Shirley, Rotel is diced tomatoes and diced chilies mixed together. Mostly tomatoes and can be purchase at most grocery stores and Walmart as well. I hope you are able to find it. :)

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
A wire rack with 15 iced oatmeal cookies on it.
