Crock Pot Boneless Beef Round Tip Roast

How hot is it where you live? It’s been super hot here in SoCal and using the crock pot just makes sense in this hot weather. This crock pot boneless beef round tip roast is great for so many meals. Start out with a nice roast dinner, then with the left overs, make some delicious shredded beef enchiladas and then if there’s any roast left, making burritos or tacos, even taquitos would be great as well.

This roast is so simple to throw together.  And, it’s so tender and full of flavor.

Basically, add chopped onions to the bottom of the crock pot. Next, add the roast, season with all the fixings, add Rotel®, beef broth, throw in some potatoes, cover and cook on high for 8 hours or low 10-12 hours and leave all the fuss and muss for the crock pot!

Crock Pot Boneless Beef Round Tip Roast

Ingredients
  • 1 4-5 lb beef round tip roast boneless
  • 1 large onion chopped
  • 6 cloves garlic chopped/minced
  • 2 cups beef broth
  • 1 10 oz can Rotel®
  • 1 Tbs garlic salt
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • 12-15 small red potatoes
Instructions
  1. In a 6 to 8 quart crock pot, add chopped onions to the bottom.
  2. Place roast on top of onions and add minced garlic.
  3. Sprinkle garlic salt, smoked paprika, pepper, cumin and chili powder on top of meat.
  4. Pour Rotel® on roast.
  5. Add potatoes, and then beef broth.
  6. Cover and cook for 8 hours on high or 10-12 hours on low.
  7. Enjoy!
