My sausage egg bites are packed with hot breakfast sausage, fluffy eggs, sharp cheddar cheese, cottage cheese, green onions, and a little kick from Cholula hot sauce. They’re the perfect grab-and-go recipe or addition to any brunch.

How to Make Sausage Egg Bites

Step 1: Cook the sausage and onions until the meat is cooked through and the onions are tender. Drain and let the mixture cool slightly.

Ingredients
  

  • 1 pound hot breakfast sausage
  • 1 cup onion, diced
  • 12 large eggs
  • 1 teaspoon Slap Ya Mama seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • ½ teaspoon garlic salt
  • 1 cup sharp cheddar cheese, shredded
  • ¼ cup cottage cheese
  • 2 green onions, chopped
  • 2 tablespoons heavy cream
  • 1 tablespoon Cholula hot sauce

Instructions
 

  • Preheat the oven to 350 degrees and spray a muffin tin with non-stick cooking spray.
  • In a large frying pan, crumble sausage and add the diced onions and jalapenos. Cook over medium heat until the sausage is no longer pink and the onions and jalapenos are tender..
  • In a large bowl, whisk eggs together.
  • Add the cottage cheese, heavy cream, and Cholula hot sauce to the eggs. Stir until combined
  • Add all of the seasonings and whisk until combined.
  • Next, add the chopped green onions and the sausage mixture into the egg mixture. Stir.
  • Add shredded cheese, stir until combined.
  • Pour into the prepared muffin tin and bake for 20 minutes.
  • Remove from the oven and enjoy.
