Now that we’re pretty much through with winter, my mind is moving on to craving Strawberry desserts as well as other types of summer fruit recipes.
I’m obsessed with the fresh taste of strawberry so I’m super excited about this delicious and simple Strawberry dessert. The best part about this crumb dessert is that it’s really quite simple to make. Just gather up the simple ingredients listed below to get started and you’ll be enjoying bite after bite in no time at all.
Can you use fresh strawberries for this Strawberry Crumb Bar recipe?
You can! Fresh strawberries are great as long as you make certain that you don’t have a ton of juice from them getting into the recipe. The same holds true for frozen strawberries as well.
While you can easily use frozen strawberries, too, just make certain that you’re aware of the amount of liquid that is going to be coming out of them as they thaw. It’s very important to make certain that your strawberries are thawed all the way so that a whole bunch more juice doesn’t come out while you’re cooking it.
Can I cut down on the amount of sugar for this recipe?
Absolutely. If your strawberries are super sweet on their own, you may not have to add sugar to make them even sweeter. I just recommend doing a taste test and making certain that they’re sweet enough before you move on to the next step. The last thing that you want is tart strawberries at the end!
Why am I adding corn starch to my strawberries and sugar mixture?
While it might seem like an out of place ingredient, it’s not. Corn starch is supposed to be in this recipe! The reason for adding it is to help add a thickener or type of syrup for the middle of the crumb bars. This way it holds together a little more firmly and you won’t have to worry about it running all over the place once you cut into them.
Do I need to soften my butter before adding to the crumble crust?
You actually don’t. You going to just cut the butter into slivers into your flour mixture so that when it bakes, it melts and distributes equally throughout the entire pan.
How will I know when this Strawberry Crumb Bar recipe is done baking?
There are actually two ways that you can tell that this dessert recipe is done. First, you’re going to notice that the smell calls you in. Once that timer is up, you should notice a lovely scent coming from your oven.
And secondly, you’re going to notice that the crumb on top should be a golden brown as well. If you have those two indicators, your Strawberry Crumb Bars are done.
What would you serve with this strawberry dessert recipe?
While it’s perfectly delicious on its own, you could easily serve it with a spoonful of whipped cream or a nice scoop or two of delicious homemade ice cream as well. (and if you get it while it’s still a tad bit warm from the oven that ice cream is going to melt perfectly right on top!)
Just make certain that you’re very careful about the temperature as the filling of this dessert will hold the heat internally for quite some time. You don’t want mouths and tongues to be burned just because they couldn’t wait for it to cool!

Ingredients Needed To Make Strawberry Crumb Bars
- Fresh strawberries
- Flour
- Sugar
- Brown sugar
- Corn starch
- Baking soda
- Cinnamon
- Butter
- Vanilla extract
- Egg
- Salt

How To Make Strawberry Crumb Bars
For The Strawberry Filling
- Add thawed, sliced or diced strawberries to a medium bowl.
- In a small bowl, whisk sugar and cornstarch together and sprinkle over strawberries. Gently stir and set aside, stirring occasionally.
For The Crumb Bars and Topping
- Preheat oven to 375° and right before adding crumb mixture, spray a 9 x 13 baking pan with a non stick spray.
- In a large bowl, whisk flour, brown sugar, sugar, baking powder, salt and cinnamon together.
- Using a pastry cutter or a fork, cut butter into flour mixture until crumbly.
- In a small bowl, whisk egg and vanilla together and add to flour mixture once butter has been added and mixture is crumbly. Continue using pastry blender until combined.
- Remove half of crumbly mixture (approximately 3 cups) and press into prepared pan.
- Stir strawberry mixture and then add to the top of the crumb mixture.
- Using clean hands and with the remaining crumbs, squeeze with hands to combine and add crumbles over strawberries.
- Place in the oven uncovered and bake for approximately 50-55 minutes or until crumb topping is slightly browned.
- Let cool completely before cutting into squares.
- *If using fresh strawberries, use 4 teaspoons of corn starch.

These were insanely delicious, I used fresh strawberries and drained any liquid before I added them. I grated my butter into the flour mixture. I am wondering if using the food processor would be okay to use. A beautiful recipe ????
