How To Make Snickerdoodles
- Preheat oven to 400° and line a baking sheet with parchment paper. Set aside.
- In a medium bowl, whisk flour, cream of tartar, baking soda and salt together. Set aside.
- In a large bowl, beat room temperature butter and sugars together until light and fluffy.
- Add egg and yolk, beat until combined.
- Gradually add the dry ingredients into the sugar mixture nd beat after each addition until combined.
- In a small bowl, whisk cinnamon and sugar together, set aside.
- Using a teaspoon, drop a rounded 1″ ball into the cinnamon and sugar mixture to coat then place on prepared baking sheet.
- Bake for 7 minutes, remove from oven, let cookies sit on baking sheet for 5 minutes then transfer to wire rack.
Why Is Cream Of Tartar Added To Snickerdoodle Cookies?
While it might sound like a totally weird ingredient to add to these cookies, it’s what gives them their chew. It activates with the other ingredients in the recipe and is a must when making these cookies. If you happen to leave it out, you’re going to notice.

Ingredients
For The Snickerdoodles
- 2 3/4 cups all purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/4 tsp salt

- 1 cup sugar
- 1/2 cup brown sugar
- 1 large egg + 1 yolk

- 3 Tbsp sugar
- 3 tsp cinnamon
