Ingredients
Cornbread Waffles
- 2 boxes jiffy cornbread
- 3 large eggs
- 1 ⅓ cups milk
- ¼ cup butter, melted
- ⅓ cup honey
Leftover Smoked Pulled Pork
- 3 cup smoked pulled pork
- 1 ¼ cup barbecue sauce
- 2 tablespoon apple cider vinegar
- 2 cup shredded cheddar cheese
- ¼ cup sliced green onions
- ¼ cup pickled jalapenos
- ¼ cup red onion, diced
Instructions
Cornbread Waffles
- In a large bowl add jiffy mix, eggs, milk, melted butter, and honey.
- Mix until smooth.
- Preheat a waffle iron, and spray with non cook spray.
- Add batter to waffle iron, and cook according to directions. (Low heat is best)
- Repeat the process with remaining cornbread batter.
Leftover Smoked Pulled Pork
- In a large skillet add pork, barbecue sauce, and apple cider vinegar.
- Cook over medium heat until heated through. About 5 minutes.
To Assemble
