Cheesy Scalloped Potatoes with Ham is a delicious comfort food recipe using leftover ham. Loaded with potatoes, onions, and a delicious cheese sauce.

When it comes to a classic comfort food dinner, that tastes amazing and is easy to make, it doesn’t get much better than cheesy scalloped potatoes with ham. This is a dinner even the fussiest eater will love especially using the bite size baby creamer potatoes. Cheesy and delicious, this is a very inexpensive dinner to make and is even more inexpensive if you are using leftover ham.

What kind of cheese is used in Cheesy Scalloped Potatoes?

In this recipe I am using sharp cheddar cheese and pepper jack. I like the slight bite of the pepper jack and think it makes an amazing combination. If you do not have pepper jack or do not like it, you can use Colby jack or just use cheddar cheese. It is easy to change up the cheese to whatever you and your family enjoy.

Cheesy Scalloped Potatoes with Ham is made with leftover ham, baby creamer potatoes and a delicious cheese sauce.

What if I don’t have Leftover Ham?

If you are craving scalloped potatoes with ham, and you do not have leftover ham available, you can buy ham steaks or purchase thick cut ham from the deli. I like using ham steaks because they are usually very inexpensive and is often the same kind of ham I would have when I am using leftovers.

Can I Use Regular Potatoes Instead Of Baby Creamer Potatoes?

Yes! We love the baby creamers and like to change things up once in a while from the normal scalloped potatoes. If you can’t find these tender little potatoes, just make sure to slice the potatoes thin and not too thick. Cooking time might vary a bit.

How to Store Scalloped Potatoes with Ham

Once the scalloped potatoes with ham have cooled, you want to store it in the refrigerator. If there is a large portion of potatoes left, you can leave them in the casserole dish and cover them well with plastic.

If there is only a small portion, while you can leave them in the dish, you can also move them to an airtight container to take up less space. The important thing is to make sure the potatoes are cooled before sealing and storing in the refrigerator.

How to Reheat Scalloped Potatoes with Ham Recipe

If there is more than a single serve portion, these potatoes can be heated up in the oven. This makes it easier to heat the entire dish. Heat the potatoes in a 400° oven for about 20 minutes or until the potatoes are warmed all the way through.

If there is a smaller portion or a single serving of potatoes, while it can still be heated in the oven, the microwave works well for reheating as well. Another option is to put the cheesy scalloped potatoes and ham into a pot and heat it in the stove.

How long do Cheesy Scalloped Potatoes last?

When stored properly in the refrigerator, cheesy scalloped potatoes will last about 3 to 5 days. This can differ depending on how long it has been since the ham was cooked originally. Once the ham has reached a maximum of 5 days, the food is no longer safe to eat.

Ingredients Needed To Make These Scalloped Potatoes

  • Leftover ham
  • Baby creamer potatoes
  • Onions, garlic
  • Butter, flour
  • Chicken broth
  • Heavy cream
  • Seasoning, salt and pepper
  • Red pepper flakes
  • Sour cream
  • Sharp cheddar cheese
  • Pepper Jack cheese

How To Make Cheesy Scalloped Potatoes with Ham

Cheesy Scalloped Potatoes with Ham is a delicious potato casserole recipe with leftover ham, a homemade cheese sauce.

  1. Start out by preheating the oven to 400° and spray a 9 x 13 baking dish with a non stick spray. Set aside.
  2. Wash potatoes in cold water, slice potatoes in half and add to a large bowl.
  3. In a large skillet, melt butter over low/medium heat.
  4. Add onions, saute for 4-5 minutes then add minced garlic and cook for an additional minute.
  5. Sprinkle flour over onions and garlic and cook for 1-2 minutes on low heat.
  6. Slowly pour chicken broth into pan, then add heavy cream stirring until combined.
  7. Continue cooking, stirring until sauce thickens up a bit remove from heat just as sauce starts to boil.
  8. Add two cups of sharp cheddar cheese to skillet and stir until combined.
  9. Once cheese has melted, add a couple large spoonfuls of cheese sauce to bottom on baking dish.
  10. Next, place 1/3 of the baby potatoes into the pan.
  11. Spoon 1/2 of the sour cream over the potatoes, 1 cup of diced ham, then add 1/3 of the cheese sauce on top of the diced ham.
  12. Sprinkle with 1/2 the pepper jack cheese, then layer again with 1/3 potatoes, remaining 1/2 sour cream, 1 cup of ham and 1/3 cheese sauce.
  13. Last layer is remaining potatoes, last 1/3 cheese sauce and then to with the remaining shredded cheese.
  14. Cover with foil and place in the oven.
  15. Bake for 1 hour 15 minutes or until potatoes are tender and cheese sauce is bubbly.
  16. Carefully remove from oven, remove foil, then place back into the oven for 15 minutes to brown the cheese up a bit.

  • 5 lbs baby creamer potatoes, washed, cut in half
  • 2 cups leftover ham, diced
  • 2 cups chopped onions
  • 5 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 1/2 cup chicken broth
  • 1 1/2 cups heavy cream
  • 2 tsp Slap Ya Mama® seasoning
  • 1 tsp salt
  • 2 tsp pepper
  • 1/2 tsp red crushed peppers
  • 1 cup sour cream
  • 3 cups sharp cheddar cheese, shredded, divided
  • 1 cup Pepper Jack cheese, shredded

Instructions

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
