Instructions

Cornbread Waffles

  • In a large bowl add jiffy mix, eggs, milk, melted butter, and honey.
  • Mix until smooth.
  • Preheat a waffle iron, and spray with non cook spray.
  • Add batter to waffle iron, and cook according to directions. (Low heat is best)
  • Repeat the process with remaining cornbread batter.

Leftover Smoked Pulled Pork

  • In a large skillet add pork, barbecue sauce, and apple cider vinegar.
  • Cook over medium heat until heated through. About 5 minutes.

To Assemble

  • Sprinkle a little cheese over the top of the waffle, top with pulled pork, and more cheese, green onions,
  • jalapeños, and red onions over the pork. Enjoy!
  • Makes 5 waffles

Notes

Tips
  • Use low heat on the waffle iron to prevent over-browning.
  • Don’t overfill the waffle maker. Cornbread batter expands.
  • Use freshly shredded cheese for better melting
  • Adjust toppings based on your spice preference
