This delicious and easy mixed berry cobbler recipe is filled with blueberries, blackberries, and raspberries, and topped with a brown sugar pecan crust that is absolutely scrumptious.

I love cobbler, and I have since I was a kid. Growing up, both my mom and my grandmother made cobblers regularly. When I struck out on my own, cobblers were my sweet of choice because they’d last for days and made great desserts and sweet breakfasts. Fast forward to being a mom, and I made cobblers all the time because they could feed my entire family along with my children’s friends after school.

As much as I love cobbler, after years of making it things got a little boring. That’s when I decided to give a version of cobbler a try that I’d had when I was at a friend’s potluck. Her cobbler had everything I loved in classic cobbler, but she topped it with a sweet, crunchy crust. I got the recipe from her, and it’s been in my rotation ever since!

Mixed Berry Cobbler with Brown Sugar Pecan Crust

This delicious cobbler starts with a homemade mixed berry filling featuring blueberries, blackberries, and raspberries. Then, I add a classic cobbler topping for that flavor that we all know and love. This is where cobbler gets a twist. After the cobbler topping, I add a brown sugar pecan crust topping that’s sweet and crunchy, adding even more sweet flavor and a ton of texture. When it’s all baked up, I end up with a cobbler that has everything we all love in the classic dessert and a little something extra that takes it to an entirely new level.

This easy recipe only uses a few simple ingredients. You probably have most of them in your kitchen already, and the ones you don’t have are all easily found at your local grocery store.

Mixed Berry Filling

  • Blueberries

  • Brown sugar

How to Make Mixed Berry Cobbler with Brown Sugar Pecan Crust

Although the filling and both toppings for this cobber are fully homemade, it’s an easy recipe that even beginners can make. There’s really nothing to it!

Step 1: Prep

Preheat the oven to 375 degrees. Then, spray a 3-quart baking dish with nonstick spray and set aside.

Step 2: Make the Mixed Berry Filling

Place rinsed berries in a large bowl. Then, sprinkle them with sugar, brown sugar, lemon juice, cornstarch, and cinnamon. Stir gently and let the mixture sit for 10 minutes while making the cobbler topping.

Step 3: Make the Cobbler Topping

Whisk the flour, brown sugar, sugar, baking powder, and salt in a medium bowl. Then, use a pastry cutter or two forks to cut butter into the mixture until crumbly. Finally, pour boiling water into the mixture and stir until combined.

Step 4: Make the Brown Sugar Pecan Topping

Add all topping ingredients to a small bowl and stir to combine.

Step 5: Construct the Cobbler

Pour the mixed berry mixture into the prepared baking dish. Then, spoon the cobbler topping over the berries and gently spread it to an even layer. Finally, spoon the brown sugar pecan mixture over the cobbler topping.

Step 6: Bake

Bake the cobbler for 55 minutes or until golden brown and topping is thoroughly baked. Serve with a scoop of vanilla ice cream or whipped topping and enjoy!

  • Cut your butter into small cubes, then place them in the refrigerator until you’re ready to cut them into the flour. The colder the better!
  • For accurate flour measuring, spoon the flour into your measuring cup and level with a knife. This avoids packing and using too much flour.
  • It’s important that you add boiling water, not just very hot water, to your cobbler topping mixture.

  • Use strawberries in place of mixed berries.
  • You can use diced apples, pears, or peaches in place of berries for the filling.

Can I use frozen berries instead of fresh?

You can. Defrost the berries, then mix them as called for in the recipe.

Does frozen fruit need to be defrosted?

It depends on the recipe. For quickbreads and muffins, there’s no need to defrost the berries. For cobblers, it’s best to defrost the berries first.

How do you defrost berries for baking?

You can leave them at room temperature for a few hours to defrost. For faster defrosting, place berries in a cold water bath. One cup of berries will defrost in about five minutes.

Will cobbler thicken as it cools?

Yes, it will. In fact, cobbler is best when it’s had time to cool down to warm instead of hot.

How to Store and Reheat Mixed Berry Cobbler

Ingredients
  

Mixed Berry Filling

  • 2 cups blueberries
  • 2 cups blackberries
  • 2 cups raspberries
  • ⅓ cup sugar
  • ⅓ cup brown sugar
  • 2 ½ tablespoons lemon juice
  • 1 tablespoon cornstarch
  • ½ teaspoon cinnamon

Cobbler Topping

  • 1 ½ cups all purpose flour
  • ⅓ cup brown sugar
  • 1/3 cup sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 stick butter, cut into small pieces
  • ⅓ cup boiling water

Brown Sugar Pecan Crust Topping

  • ¾ cup brown sugar
  • ¼ cup all purpose flour
  • ¾ cup chopped pecans
  • ¼ cup butter melted

Instructions
 

  • Preheat the oven to 375° and spray 3 quart baking dish with non-stick cooking spray. Set aside.

Mixed Berry Filling

  • Rinse berries and place in a large bowl.
  • Sprinkle sugar, brown sugar, lemon juice, cornstarch and cinnamon over berries. Stir gently and let sit for 10 minutes while preparing the flour mixture.
  • Pour berries into the prepared baking dish.

Cobbler Topping

  • In a medium bowl, whisk flour, brown sugar, sugar, baking powder and salt together until combined.
  • Using a pastry blender, or two forks, mix butter into flour mixture until crumbly.
  • Pour boiling water into flour mixture. Stir until combined.
  • Spoon topping mixture over berries and gently spread making sure to cover the berries completely.

Brown Sugar Pecan Crust Topping

  • In a small bowl add all the brown sugar pecan crust ingredients. Stir to combine.
  • Spoon brown sugar pecan mixture evenly over cobbler topping.
  • Bake for 55 minutes.
  • Serve warm with a scoop of vanilla ice cream or whipped topping and enjoy.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
