Jicama Avocado Salad

This jicama avocado salad is a perfect summer salad recipe. With the crunchiness of the jicama, the creaminess of the avocados and the flavorful red onions, cilantro and tomatoes, all mixed with a delicious hatch green chile sauce, makes a delicious zesty salad that is not only tasty, but healthy.

Jicama is great and used in so many different recipes or just sliced up and added to a veggie tray along with broccoli, carrots, cauliflower and many other favorite vegetables with a tasty ranch dip. Now that’s what I’m talking about. Healthy and delicious, this jicama avocado salad is not only healthy, it’s Vegan as well.

There is a bite to it but it’s not too spicy at all. The hatch sauce is a bit on the spicy side. If you are not able to buy hatch green chile sauce in your local grocery store, salsa verde green chile sauce works well too. There’s just something about the deliciousness in the hatch sauce.

Ingredients
  

  • 2 jicamas, peeled, diced into tiny bite size chunks
  • 2 large avocados, diced
  • 2 cups grape tomatoes, sliced
  • 1/2 cup chopped cilantro
  • 1/2 cup red onions, chopped
  • 1 1/2 cups hatch sauce, can use salsa verde

Instructions
 

  • Peel then dice jicama into small chunks. Add to medium mixing bowl.
  • Slice tomatoes in half, or quarters, add to bowl.
  • Add chopped cilantro, onions, avocados and hatch sauce, stir.
  • Chill, then enjoy!

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
