Grilled Cheese with Leftover Smoked Brisket on Garlic Toast

Leftover brisket is always a plus when it comes to making a variety of different meals. This grilled cheese is loaded with leftover chopped BBQ brisket, sharp cheddar, and is made with Texas toast garlic toast. An absolutely delicious leftover brisket recipe the whole family will love.

Brisket is the undisputed king of beef if you ask me. This fantastic cut is perfect for BBQing, smoking, or cooking in the slow cooker thanks to all that wonderful connective tissue that it has. When cooked low and slow, that tough, fibrous hunk of meat transforms into a luxuriously tender and juicy beef bonanza that’s absolutely fantastic. I love it fresh off the smoker or BBQ, but I also love using the leftovers for other dishes, as well. I’ve made everything from tacos to quesadillas with it, but one thing I really love more than all the rest is my brisket grilled cheese. It’s a fantastic way to use leftover brisket in an unexpected way that’s absolutely delicious.

Grilled Cheese

This fantastic grilled cheese starts with leftover brisket that I heat up with a little BBQ sauce to keep it moist and flavorful. Then, I sandwich shredded brisket and sharp cheddar cheese between two slices of garlic Texas toast and cook until golden in a pan. When it’s all said and done, I have super thick grilled cheese sandwiches loaded with beefy, cheesy, garlic bread goodness that everyone loves. It’s an absolutely delicious fusion of BBQ and grilled cheese that will take you by surprise in the best way possible.

You’ll only need a handful of ingredients to make this recipe. It just takes some brisket, cheese, and Texas toast. That’s it!

  • Leftover chopped BBQ brisket
  • Texas Toast garlic toast
  • Sharp cheddar cheese
  • Barbecue sauce, if needed

How to Make Grilled Cheese with Brisket and Garlic Toast

Making this recipe is super simple, as well. You’ll be in and out of the kitchen in no time with a plate full of melty, beefy grilled cheese sandwiches.

Step 1: Heat the Brisket

Heat the leftover brisket and BBQ sauce over medium heat in a small saucepan.

Step 2: Grill the Sandwiches

Place four pieces of garlic Texas toast in a large frying pan over medium heat. Grill the toast on one side, then flip and add a slice of cheese, brisket, and another slice of cheese to two of the slices of toast. Add the two slices on top of the filling to make sandwiches and cover the skillet with a lid to help the cheese melt. Flip the grilled cheese and cook until golden on both sides. Repeat until all the sandwiches have been made. Enjoy with BBQ sauce for dipping or your favorite dipping sauce.

  • The Texas toast is thick, so it’s important to grill both sides to ensure that it’s hot all the way through.
  • Heat up the brisket before adding it to the sandwiches so everything is nice and hot by the time the toast is golden.

Ingredients
  

  • 2 cups leftover chopped BBQ brisket
  • 8 slices Texas Toast garlic toast
  • 8 slices sharp cheddar cheese

Instructions
 

  • In a small saucepan, heat leftover barbecue brisket over medium heat (add a little bbq sauce if needed).
  • In a large frying pan over medium heat, place 4 pieces of garlic toast in the pan.
  • Grill on one side, flip over, add a slice of cheese, then chopped brisket, followed by another slice of cheese on two of the slices.
  • Then add the remaining garlic toast on top.
  • Cover with a lid and let the cheese melt a bit, flip over, cover and cook until golden on both sides.
  • Repeat with the remaining 4 slices of garlic toast.
