This Brisket Baked Potato recipe is a hearty, and delicious meal packed with tender leftover brisket, BBQ sauce, shredded cheddar cheese and topped with fried onion strings. A very delicious baked potato recipe and a favorite way to use leftover beef brisket.

If you love BBQ and baked potatoes, then this is the recipe for you! Years ago when I was looking for a way to use up my leftover brisket, I created this recipe. I had made brisket the day before, and all the sides had been devoured. That, of course, left me with brisket and nothing to serve it with. I wasn’t feeling like making anything complicated, so I decided to bake some potatoes and combine them with the brisket and some crispy onion strings that I had made the day before. The result? Pure deliciousness.

BBQ Brisket Baked Potato

Of course, the recipe I made was so good, that I now make fresh crispy onion strings specifically to go with my brisket and baked potatoes. While it’s still a great recipe to use up leftover brisket, I must confess that I usually just make it all fresh. It’s just so good! A perfectly baked potato that’s light and fluffy is topped with tender, BBQ-soaked brisket, crispy onion strings, and cheese. Oh, it doesn’t get much better.

I love to make this when company is coming over or as a special weekend treat. If I happen to have leftover brisket, I’ll whip this recipe up on weeknights, too. I mean, it doesn’t take much to bake potatoes, after all!

Tips and Variations

One of the best things about this recipe – outside of how delicious it is, of course – is how easy it is to switch things up. Just a few tweaks, and you’ll have the ultimate baked potato and brisket feast! I also love how easy this recipe is. Although, I do have some tips to go along with these variations to ensure that you make the best possible version of this recipe.

Tips

  • Cut a canoe shape out of your potato instead of just a single slice down the length of it. You want the potato to be able to hold all that brisket goodness, so cut a wedge out of the length of the potato so there’s plenty of room to hold all that beef!
  • When adding the brisket to the baked potatoes, don’t just slice it or pull it off in chunks. Instead, shred it and serve it up as pulled beef so you can get more in the potato.

Variations

The easiest way to change things up with this recipe is by changing the toppings you add. Some great suggestions are:

  • Sour cream
  • Any of your favorite cheeses
  • Sliced green onions
  • Chives
  • Diced red onions
  • Cilantro
  • Your favorite BBQ sauce – store-bought or homemade
  • Yellow slaw (or pool room slaw, depending on where you live)

What is the best kind of potatoes for baked potatoes?

Russet potatoes are the classic choice and the best. They’re high in starch and low in moisture which is why they’re so fluffy after they’re baked. Their thick skin also gives that classic, crisp baked potato skin.

Do you have to wrap baked potatoes in foil?

You don’t. In fact, some people prefer to bake them without aluminum foil to create an extra crispy skin.

How do you bake a potato without butter?

You can use all kinds of different ingredients in place of butter for baked potatoes.

  • Greek yogurt (a great substitute for sour cream )

  • Bacon substitutes.

Can you shred brisket?

Absolutely! It’s delicious when shredded. All you need are two forks or two shredding claws.

Can you freeze baked potatoes?

You can freeze baked potatoes for up to 3 months. I don’t recommend freezing these baked potatoes, however. There’s a lot going on with them, and they’ll be difficult to reheat evenly.

How to Store and Reheat Brisket Baked Potato

Store the baked potatoes, brisket, and toppings separately in their own containers in the refrigerator for up to 3 days. To reheat, place the baked potatoes on a baking sheet, fill them with the brisket, and bake them under a loose foil tent at 325-degrees until heated through. Then, top with your favorite toppings.

Brisket Baked Potato Ingredients

It only takes a few simple ingredients to make this delicious recipe. You’ll probably have most, if not all, of the ingredients in your kitchen already.

  • Large russet potatoes (Costco® size potatoes)
  • Leftover beef brisket
  • Barbecue sauce
  • Beef broth
  • Sharp cheddar cheese
  • Butter
  • Salt & black pepper, to taste
  • Garnish with Crispy Onion Strings

Brisket Baked Potato Instructions

This is an incredibly easy recipe to make. The majority of the work is simply making a space in your potatoes to add your brisket. It really is very simple.

Step 1: Bake the Potatoes

Preheat the oven to 350 degrees, then wash and dry the potatoes. Pierce each potato with the tines of a fork a couple of times and wrap the potatoes in aluminum foil. Bake on a baking sheet for about an hour or until the potatoes are soft when a sharp knife is inserted into them. Remove from the oven and set aside.

Step 2: Heat the Brisket

While the potatoes are baking, add the leftover slow cooker brisket and pour the barbecue sauce, and beef broth to a medium saucepan. Heat over medium heat until the brisket is warmed through.

Step 3: Prep the Potatoes

Use a sharp knife to cut a canoe shape down the length of each potato flesh. Remove the wedge and scoop out some of the potato, placing it into a bowl.

Step 4: Make the Filling

Cut and scoop all the potatoes. Then, add butter and shredded cheese to the bowl with the scooped-out potato. let the butter and cheese melt, stir, and then place the mixture back into the potatoes.

Step 5: Top

Top each potato with cheese, barbecue brisket, more BBQ sauce, and onion strings, if desired. Enjoy!

Ingredients
  

  • 4 large russet potatoes, Costco® size potatoes
  • 2 cups leftover beef brisket
  • ⅓ cup barbecue sauce
  • ¼ cup beef broth
  • 2 cups cheddar cheese, divided
  • 2 tablespoons butter
  • Crispy Onion Strings optional

Instructions
 

  • Preheat oven to 350° and wash and dry potatoes. Pierce each potato with the tines of a fork a couple times and then wrap potatoes in aluminum foil.
  • Place on a baking sheet and place in the oven. Bake for an hour or until when a sharp knife is inserted into the potatoes, they are soft.
  • Remove from oven and set aside.
  • While the potatoes are baking, using a medium saucepan, add leftover brisket, barbecue sauce and beef broth.
  • Heat over low heat until heated through.
  • Once potatoes are cool enough to handle, remove foil from potatoes.
  • Using a sharp knife, make a slice on the top of the potatoes starting on the top of one side and going across to the other side, basically making a canoe shape.
  • Next, using a spoon, scoop out some of the potato and place it in a bowl.
  • Do this with all of the potatoes then add butter and 1 cup of shredded cheese. Let butter and cheese melt, stir and then put back into the potatoes. Salt and pepper to taste, if desired.
  • Once potatoes are filled back up, top with remaining cheese, barbecue brisket, additional BBQ sauce drizzled over the top, and onion strings, if desired.
  • Serve immediately.
