If you want the best comfort food, it doesn’t get better than this Easy Chicken Pot Pie recipe. It comes together with only a small amount of effort and the flavors are amazing. One bite of this pot pie and it will become your go to comfort meal recipe. If you have your own homemade pie crust recipe you can substitute it for the refrigerated pie crust and make an easy homemade chicken pot pie from scratch.

Easy Chicken Pot Pie

When it comes to chicken pot pie, you are going to love this recipe. This delicious comfort food is going to be your go to recipe. This is an easy recipe that you can have in the oven within 30 minutes.

Can I Use Other Veggies in Chicken Pot Pie

In this recipe I am using onions, celery and a frozen vegetable mix, that usually has peas, corn and carrots. You can certainly change this up by using different vegetables. You can add whatever kind of veggies your family likes, like broccoli, asparagus, green beans, mushroom, or cauliflower.

Can Chicken Pot Pie Be Frozen Before It Is Baked

If you want to freeze the chicken pot pie, it is best to freeze it before it is baked. This will keep the crust flaky and crispy. You can freeze the pot pie after it is baked, but the crust tends to get soggy. It is still an option if the meal will go bad before it gets finished.

How Do You Bake A Frozen Chicken Pot Pie?

If you chose to bake the chicken pot pie when it is frozen, you can easily do it. Brush the top of the pot pie with an egg wash and then bake it in a 375 degree oven. It will take about 45 minutes or until the crust is brown and bubbly.

How Long Will Chicken Pot Pie Last?

When you make this chicken pot pie, you want to make sure it is stored in an airtight container or wrapped well. Keep it in the refrigerator. When the chicken pot pie is stored properly, it will last for 3 to 5 days.

Can I use rotisserie chicken?

While I am using fresh baked chicken breast, you can certainly save a step by using rotisserie chicken. Cut the chicken into bite size pieces and you can make the recipe the same. This is a great way to use leftover chicken as well.

How do I prevent a pot pie crust from getting soggy?

When I am making this potpie, I do not have an issue with the crust getting soggy. If you are concerned, you can also blind bake the crust.

Before adding the filling to the bottom crust, brush it with egg wash first. This will help seal the crust. Then add the chicken mixture. Place the pot pie on the bottom level of the oven so that the heat can start sealing the top crust right away.

How to Get a Shiny Golden Pie Crust

There are a lot of ways to give the pie crust that shiny golden color. Using an egg wash will give the crust that golden look. The proteins and sugars in the egg wash caramelize as the pie is cooking and it gives it the gorgeous color that everyone looks for in a pie crust. If you prefer not to use an egg wash, you can brush the top crust with olive oil before putting in the oven to bake.

Ingredients to Make an Easy Chicken Pot Pie

  • Chicken Breasts
  • Onion
  • Celery
  • Butter
  • Garlic
  • Flour
  • Salt
  • Pepper
  • Slap Ya Mama®
  • Chicken broth
  • Heavy cream
  • Frozen vegetables, thawed
  • Sharp cheddar
  • Pillsbury™ refrigerated pie crust

How to Make an Easy Chicken Pot Pie

  • Preheat oven to 425°.
  • Take one pie crust and place it into the bottom of a pie pan. Set other pie crust aside for later.
  • In a medium-sized saucepan, melt 2 tablespoons of butter over medium heat.
  • Add chicken to pan, sprinkle with salt, pepper, and Slap Ya Mama® and cook until done. Remove chicken from pan and set aside.
  • In the same saucepan used for the chicken, melt the remaining 2 tablespoons of butter. Add in the onions, celery, and garlic. Cook until onion becomes translucent and celery is tender, stirring frequently.
  • Next, sprinkle flour over vegetables, stir and let cook for 2 minutes.
  • Gradually pour chicken broth and heavy cream into pan, stirring frequently until hot and thickened.
  • Now, add in chicken, thawed vegetables, and cheese. Stir and let cook for 5 minutes.
  • Spoon mixture into prepared pie pan and top with remaining pie crust.
  • Seal and fluke edges of pie and cut several slits into the top of the pie crust.
  • Place pot pie on a baking sheet, and bake for 35-40 minutes or until crust is golden brown.
  • During the last 10 minutes of cook time, if edge’s are getting too brown, place foil strips over the crust edges and continue cooking until done.
  • Remove from oven and enjoy!

Ingredients
  

  • 2 chicken breasts, cut into bite-sized pieces
  • ½ cup onion, chopped
  • ½ cup celery, chopped
  • 2 cloves garlic, minced
  • ¼ cup butter, divided
  • ⅓ cup flour
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp Slap Ya Mama®
  • 1¾ cups chicken broth
  • ½ cup heavy cream
  • 2 cups frozen vegetables, thawed
  • 1 cup sharp cheddar
  • 1 box Pillsbury™ refrigerated pic crust, room temperature

Instructions
 

  • Preheat oven to 425°.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
