Cherry Pecan Cookies Recipe

Now that cherries are in season, we’ve been buying them often because they are so delicious. These cherry pecan cookies with orange glaze are perfect to make if you love soft and thick cookies and are a lover of cherries. Each cookie is loaded with bits of fresh cherries and pecans, then drizzled with an orange glaze that’s to die for. A delicious combination that the whole family will love.

Using fresh cherries is best when making these cherry pecan cookies. Just cut each cherry in half, remove the seeds, and then cut into small pieces so you have little bits of cherries. Chop the pecans into small pieces and when the cherries and pecans are combined, the tastes is awesome, especially with the orange glaze drizzled over the top of each cookie.

Ingredients
  

For the Cherry Pecan Cookies

  • 2 cups all-purpose flour
  • 2/3 cup brown sugar, packed
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 2/3 cup butter, softened
  • 1 egg
  • 1/2 tsp vanilla
  • 2 Tbsp orange juice
  • 1 cup fresh cherries, pitted, chopped into small pieces
  • 1/2 cup pecans, chopped

For the Orange Glaze

  • 1 cup powder sugar
  • 1/2 tsp orange zest
  • 2-3 Tbsp orange juice, squeezed fresh

Instructions
 

For the Cherry Pecan Cookies

  • Preheat oven to 350°
  • In a medium mixing bowl, whisk flour, brown sugar, baking powder, baking soda and cinnamon. Cut butter into mixture, using a pastry blender, until mixture resembles fine crumbs.
  • In a small mixing bowl, beat egg and then add orange juice. Add to flour mixture and stir until incorporated. 
  • Add chopped cherries and pecans. Stir.
  • Using a 1" cookie scoop, drop each cookie onto an ungreased cookie sheet 2" apart. 
  • Bake for 11-13 minutes or until bottoms just start to brown. Remove from oven and place on wire rack to cool. 

For the Orange Glaze

  • In a small mixing bowl, mix powder sugar, orange zest and orange juice together until desired consistency is reached. Drizzle orange glaze with a spoon over cookies once they have cooled completely. 
  • Let glaze set then enjoy!

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
A wire rack with 15 iced oatmeal cookies on it.
