Cheesy Breakfast Potatoes with Crispy Bacon are a delicious addition to the breakfast menu and are loaded with cheese and one of the most amazing foods, Applewood bacon.

This delicious breakfast recipe is so hearty and delicious, it will satisfy everyone in the family. I love potatoes for breakfast, and being a mom of a full house, I learned early on that you can really stretch your budget and your food by making potatoes with tons of delicious ingredients mixed into them. I routinely made this recipe on the weekends because it was absolutely delicious and so substantial, no one complained about being hungry, even when it was time for lunch! Also, I loved making a double or triple batch of this recipe to carry the family through to around Tuesday (if the kids’ friends didn’t eat it all after school)!

Cheesy Breakfast Potatoes with Crispy Bacon

This delicious breakfast starts out with diced potatoes cooked until they’re just browned. Then, I add diced onions, bell peppers, and garlic, cooking the potatoes until they’re nice and crispy. Finally, I mix it all up with melty cheese and crumbled crispy bacon for a savory, hearty start to the day that will satisfy everyone, even those family members that seem to be bottomless pits!

How to Make Cheesy Breakfast Potatoes with Crispy Bacon

Making this recipe is incredibly easy. It’s a basic recipe that even beginners will have no trouble with.

Step 1: Cook the Potatoes

Cook the potatoes in a large skillet or frying pan over medium heat until they just start to brown. Then, add the onions, bell pepper, and garlic; salt and pepper to taste; and cook until the onions are translucent and the potatoes are brown and crispy.

Step 2: Cook the Bacon

While the potatoes are cooking, cook the bacon over medium heat to your desired crispness. Place the bacon on a plate lined with paper towels to cool, then crumble. Set aside.

Step 3: Finish the Potatoes

When the potatoes are finished cooking, turn off the heat and sprinkle shredded cheese over them while still in the pan. Add the bacon crumbles and spoon onto a plate. Top with sour cream and enjoy!

Ingredients
  

  • 4 potatoes, peeled, diced into small pieces
  • 1/2 cup green bell pepper, diced small
  • 1/2 cup onions, chopped
  • 3 cloves garlic, minced
  • 2-3 tablespoon vegetable oil, might need more
  • 1 teaspoon salt, more or less to taste
  • 1 teaspoon black pepper
  • 1-2 cups sharp cheddar cheese, shredded
  • 8-10 pieces Applewood bacon, crumbled into small pieces
  • Optional: sour cream for topping

Instructions
 

  • In a large skillet or frying pan, heat oil over medium heat.
  • Add potatoes. Cook until potatoes just start to brown.
  • Stir in onions, bell pepper and garlic.
  • Add salt and pepper.
  • Cook until onions are translucent and potatoes are brown and crispy.
  • In the meantime while the potatoes are cooking, cook bacon to desired crispiness.
  • When cooked, place bacon on a plate lined with paper towels. Once cooled, crumble bacon. Set aside.
  • When potatoes are finished cooking, turn off heat and sprinkle shredded cheese over the top of the potatoes while they are still in the pan.
  • Add bacon crumbles.
  • Spoon onto plate and add sour cream. and green onions, if desired.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
