This Cheesy Breakfast Potato Casserole is an easy and delicious potato recipe. This casserole is perfect for a simple filling breakfast side or make it for a family get together or for brunch.

Loaded with potatoes, two types of cheese and so much more, this is an easy, cheesy potato breakfast casserole recipe. Not only is this perfect to serve any morning, it’s an easy recipe for special occasions and Christmas morning too. Be sure to save this recipe because it is going to become one of your favorites. My family loves this recipe.

Cheesy Potato Casserole for Breakfast

Casseroles are perfect for comfort meals. This breakfast casserole is cheesy and filling with a slight kick from the seasoning.

Don’t think that this cheesy potato casserole is only for breakfast. You can also make this casserole as a side dish with beef, chicken or pork. There are so many ways to use casserole dish to create filling meals.

Can Cheesy Potato Casserole for Breakfast Be Made Ahead

While this cheesy potato casserole tastes great as leftovers, you want to make it fresh before serving. If you want to make this casserole ahead of time, get everything prepared up to adding the crackers.

You can store the prepared casserole in the refrigerator with an airtight lid or wrap it well with plastic or foil. Once you are ready to bake the casserole, add the cracker crumbs and then bake.

You can also make this potato casserole for make ahead breakfasts. Bake it one morning and you are able to eat it for a few days. You can also freeze the casserole. Split it into individual serving sizes and wrap each piece with plastic wrap.

Pair the casserole with scrambled eggs or baked egg muffins. You can freeze everything together to make an extremely easy breakfast idea.

How to Store Cheesy Breakfast Potato Casserole

If you have leftovers of this cheesy breakfast potato casserole, you want to store it in the refrigerator. The casserole will stay good to eat when it is stored properly for up to 5 days. Make sure the casserole is completely cool before wrapping it well in plastic wrap or foil. You can also move the casserole to an airtight container in order to keep the breakfast casserole fresh.

How to Reheat Cheesy Breakfast Casserole

This cheesy breakfast casserole can be reheated in the oven or in the microwave. If I am reheating a smaller portion of the casserole, like a single portion, I will most times use the microwave. If I am reheating the entire casserole, I will usually use the oven to reheat the casserole. Be sure to keep it covered with foil so that the top of the casserole doesn’t get too browned.

What Can I Use Instead of Slap Ya Mama® Seasoning

Slap Ya Mama Seasoning is basically a Cajun seasoning. You can make your own Cajun seasoning using garlic powder, onion powder, salt, oregano and thyme. Then adjust the heat using cayenne pepper, smoky paprika and chili flakes.

Can This Be Made As a Hash Brown Casserole Instead

Yes, just use shredded hash browns in place of the Potatoes O’Brien.

Ingredients Needed For Cheesy Breakfast Potato Casserole

  • Potatoes O’Brien
  • Butter
  • Sour cream
  • Cream of chicken soup
  • Diced green chilies
  • Garlic salt
  • Slap Ya Mama® seasoning
  • Pepper
  • Sharp cheddar cheese
  • Monterey Jack cheese
  • Ritz® crackers
  • Optional: green onions, cooked bacon

How To Make Cheesy Breakfast Potato Casserole

  1. Preheat oven to 350° and spray a 3 quart baking dish with non stick spray right before filling.
  2. Using a large bowl, add all ingredients to bowl, except crackers, and stir until combined.
  3. Spoon into prepared dish and top with crushed crackers.
  4. Bake for 45 minutes or until potatoes are hot and bubbly and crackers are browned.
  5. Carefully remove from oven and enjoy.

  • 28 oz bag Potatoes O'Brien
  • 6 tbsp butter, melted
  • 1 cup sour cream
  • 10.5 oz can cream of chicken soup
  • 4 oz can diced green chilies, drain juice
  • 1 tsp garlic salt
  • 1 tsp Slap Ya Mama® seasoning
  • 1 tsp pepper
  • 1 cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 sleeve Ritz® crackers, crushed

Instructions
 

  • Preheat oven to 350° and spray a 3 quart baking dish or 13 x 9 baking dish with non stick spray right before filling.
  • Using a large bowl, add all ingredients to bowl, except crackers, and stir until combined.
  • Spoon into prepared dish and top with crushed crackers.
  • Bake for 45-55 minutes or until hot and bubbly.
  • Carefully remove from oven and enjoy.
