How to make Broccoli Cheddar Egg Bites

1: Whisk the eggs. Then, add everything except the broccoli and cheese and mix again.

2: Stir in the broccoli and cheese until evenly distributed.

3: Fill prepared muffin wells ¾ full and bake until set in the center and lightly golden around the edges.

Ingredients
  

  • 8 large eggs
  • 1 cup broccoli florets, chopped small
  • 1 cup sharp cheddar cheese, shredded
  • ¼ cup cottage cheese
  • 2 tablespoons heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
 

  • Preheat the oven to 350 degrees and spray a muffin tin with nonstick cooking spray.
  • In a large bowl, whisk eggs together until combined well.
  • Next, add cottage cheese, heavy cream, garlic powder, and onion powder. Mix until well combined.
  • Now, add cheddar cheese and broccoli. Mix until fully incorporated.
  • Pour egg mixture into prepared muffin tin, filling each cup ¾ of the way full.
  • Bake in a preheated oven for 20 minutes.
  • Remove from the oven, let cool, and enjoy.
