My broccoli cheddar egg bites are fluffy, cheesy, loaded with fresh broccoli, and incredibly simple to make.

  • Preheat the oven to 350 degrees and spray a muffin tin with nonstick cooking spray.
  • In a large bowl, whisk eggs together until combined well.
  • Next, add cottage cheese, heavy cream, garlic powder, and onion powder. Mix until well combined.
  • Now, add cheddar cheese and broccoli. Mix until fully incorporated.
  • Pour egg mixture into prepared muffin tin, filling each cup ¾ of the way full.
  • Bake in a preheated oven for 20 minutes.
  • Remove from the oven, let cool, and enjoy.

Notes

  • Chop the broccoli into very small pieces so it cooks evenly.
  • Don't overbake or the egg bites can become rubbery.
  • Grease the muffin tin well for easy removal.
  • Allow the egg bites to cool for a few minutes before removing them from the pan.
  • Store leftovers for easy breakfasts all week long.
