In our house, we love Taco Tuesdays. Not only are tacos simple and easy to make but the flavor of them is so versatile as well. And if you’re looking for a new taco recipe that is certain to bring you joy, that are quick and easy, check out these delicious Southwest Rotisserie Chicken Tacos. They’re packed full of taste and are one of the simplest ways to make tacos, ever.

Easy Southwest Chicken Tacos

What makes this recipe really easy is that you get to use an already cooked rotisserie chicken. For me, this is huge! When I’m already running low on time, I find great comfort knowing that I can cut out the time needed to cook up the chicken since it’s already done for me.

And can we all just agree that buying a rotisserie chicken from the store just provides so many great uses? I can literally get 2-3 meals out of one purchase with ease!

Will these tacos taste good with flour tortillas as well?

Of course! We just so happen to be big fans of corn tortillas but flour ones work well also. People who are gluten-free also like having the corn tortillas as an option as well so that they can eat and enjoy without worry.

You’ll find that flour tortillas tend to be a bit softer in texture and hold up a little bit better, too. But corn tortillas are nice and thin and offer a fun flavor as well. In my mind, you can’t go wrong!

Is there a way to cut out the carbs from this recipe?

The easiest way to cut down on some of the carbs is to leave out the tortillas altogether. You can easily make this into a taco bowl and pile in the low carb ingredients at that point in time.

The beans and corn will add carbs to this dish so it’s up to you if you want to have those in there or omit. (And while it might change up the flavor just a little bit, it’s still a tasty recipe to try!)

Can you freeze rotisserie chicken for later?

I’ve even frozen the chicken multiple ways and then labeled it so that I know what I have to use for my future chicken recipes as well. Chicken is one of those meats that freezes really, really well as long as you’re certain to have it in an airtight container for later.

Extra Toppings to Add to these Easy Southwest Chicken Tacos

We all know that tacos are all about the toppings. I’m a huge fan of cheese and cilantro but I also never miss out on adding fresh onions and tomatoes also. (especially during the summer months when I have a garden full of veggies!)

Don’t forget to add on your favorite salsa and I’ve also been known to whip up delicious homemade guacamole as well. And if you like spice, fresh jalapenos are going to be super important, too!

Make certain to put each topping into its own bowl so that everyone can pick and choose what works best for them. Some like tacos spicy while others want them to be milder. And the beauty of these tacos is that you can make your own choice and build your own accordingly.

Ingredients Needed To Make Southwest Chicken Rotisserie Tacos

  • Rotisserie chicken
  • Lime juice
  • Cumin, chili powder
  • Garlic salt, pepper
  • Slap Ya Mama seasoning
  • Black beans, corn
  • Green onions
  • Fresh cilantro
  • Rotel®
  • Avocado salsa (or regular salsa)
  • Corn tortillas
  • Vegetable oil
  • Optional: shredded cheese, sour cream, tomatoes, hot sauce

How to make Easy Southwest Chicken Tacos

  • In a medium saucepan, add shredded chicken, lime juice and all seasonings. Stir.
  • Add corn, black beans, cilantro, green onions, Rotel and avocado salsa. Heat over medium heat until heated through.
  • In a large frying pan or skillet, heat oil over medium high heat. Cook tortillas to desired crispiness. Remove and place on plate lined with paper towels to absorb excess oil.
  • Fill taco shells with chicken mixture, top with sour cream, shredded cheese and tomatoes as desired.

Ingredients
  

  • 1 Rotisserie chicken, shredded (about two cups)
  • 1 tbsp lime juice
  • ½ tsp cumin
  • ½ tsp garlic salt
  • ½ tsp pepper
  • ½ tsp slap ya mama seasoning
  • ¼ tsp chili powder
  • 15 oz can whole corn, drained
  • 15 oz can black beans, drained, rinsed
  • ½ cup green onions, sliced
  • ½ cup cilantro, chopped
  • 10 oz can Rotel®
  • 8 oz avocado salsa (or regular salsa)
  • Optional: shredded cheddar cheese, sour cream, tomatoes
  • 12+ corn tortillas
  • 1 cup vegetable oil

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
