Pecan Pie Bars

Now that we are inching closer and closer to fall, these pecan pie bars are the perfect fall dessert recipe to kick off the fall baking season. These delicious bars are super moist, loaded with a chewy pecan filling on a buttery shortbread crust, and tastes just like grandma’s southern pecan pie.

Pecan Pie Bars are sweet, nutty, and the buttery shortbread crust, loaded with the chewy pecan mixture, tastes just like Grandma's old fashioned pecan pie.

The Best Pecan Pie Bars

If you love pecan pie then these pecan pie bars are definitely the best and a delicious dessert that always gets rave reviews.

This recipe is from my sister, Linda, and she has been making these pecan bars forever. Her famous line regarding these delicious bars is that you have to bake em’ and take em’ because as she states, “if you don’t, you will end up eating all of them yourself, they’re that good”! So Linda makes sure when she bakes these delicious bars that they won’t be around for long because they are wayyyyy too delicious.

I made these sweet and extremely nutty pecan pie bars the other day and just so happen to have them sitting on the counter when Mark, the quality control superintendent for our home builder, came over to discuss the minor repairs that needed to be done on own new home. As we were talking in the kitchen area, I offered Mark one. He gladly said he’d take one “to go” and we continued to discuss the repairs. Mark told us that he was starting his vacation the next day but the workers would be able to do the repairs while he was away. We said goodbye and he left with his baggie in hand.

About an hour later my phone rang and it was Mark. He told me he LOVED the bars and thank me. I told him I have more and if he was still in the area he’s welcome to swing by for some more. Long story short, Mark came by the next morning (the first day of his vacation) for more of these irresistable pecan bars. He said his mom is a real good cook but these were better than his mom’s pecan pie.

Easy Pecan Pie Bars Recipe

This bar recipe is definitely one dessert to add to your holiday baking list. Easy to make, definitely easy to eat and no fork is needed. That’s my idea of an easy way to eat pie. We hope these pecan bars will become a favorite with your family too.

Ingredients Needed To Make Pecan Pie Bars

  • Flour and salt
  • Brown sugar
  • Butter
  • Eggs
  • Dark corn syrup
  • Sugar
  • Vanilla Extract
  • Pecans

How To Make Pecan Pie Bars

  • In a medium mixing bowl, combine flour and brown sugar together.
  • Using a pastry cutter, add butter and cut mixture until it resembles coarse crumbs.
  • Press mixture into a 9 x 13 inch baking pan, bake for 12-15 minutes, then remove from oven.
  • While crust is in the oven, blend eggs, corn syrup, sugar, vanilla and salt until well combined.
  • Stir in pecans and pour pecan mixture over buttery shortbread crust.
  • Reduce temperature to 275° and bake for 50 minutes until filling is set.
  • Cool on wire rack. Once cool, cut into bars.

Ingredients
  

For The Buttery Shortbread Crust

  • 2 cups all purpose flour
  • 1 cup brown sugar, packed
  • 1 cup butter

For The Pecan Pie Topping

  • 5 eggs
  • 1 cup dark corn syrup
  • 2/3 cup sugar
  • 1 tsp vanilla
  • 1/8 tsp salt
  • 2 cups chopped pecan

Instructions
 

  • Preheat oven to 350°

For The Buttery Shortbread Crust

  • In a medium mixing bowl, combine flour and brown sugar together.
  • Using a pastry cutter, add butter and cut mixture until it resembles coarse crumbs.
  • Press mixture into a 13 x 9 inch baking pan, bake for 12-15 minutes, then remove from oven.

For The Pecan Pie Topping

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
