Peach Blueberry Cobbler

Are you a peach cobbler lover? Blueberry cobbler lover? How about a delicious Peach Blueberry Cobbler that has both fresh peaches, fresh blueberries and is packed full of delicious flavor?

This peach blueberry cobbler is super delish and with the summer season almost here, this is a perfect and easy cobbler recipe to start the season off right. We love any kind of fruit cobbler and peach is one of our all-time favorites, but so is blueberry. My thoughts…. make a peach blueberry cobbler. YUM!

Peach Blueberry Cobbler

Ingredients Needed for Peach Blueberry Cobbler

  • Peaches
  • Blueberries
  • Flour
  • Baking Powder
  • Sugar
  • Brown Sugar
  • Lemon Juice
  • Butter
  • Cinnamon
  • Corn Starch
  • Salt

Peach Blueberry Cobbler

How To Make Peach Blueberry Cobbler

  • Start out by peeling, removing the pits and slicing peaches about ¼ inch thick then add to a large mixing bowl.
  • Rinse blueberries and place in the bowl with the peaches.
  • Sprinkle sugar, brown sugar, lemon juice, corn starch and cinnamon over fruit and stir gently. Let sit for 5 minutes then stir again.
  • Pour fruit into an oval 3 quart baking dish.
  • In a medium mixing bowl, whisk flour, sugar, brown sugar, baking powder and salt together.
  • Using a pastry blender, mix butter into flour mixture until mixture becomes crumbly.
  • Pour boiling water into flour mixture and stir until combined.
  • Spoon mixture over peaches and blueberries, spread gently making sure to cover the fruit completely.
  • In a small bowl, mix cinnamon and sugar together and sprinkle on top of the cobbler.
  • Bake uncovered for 50-55 minutes or until topping is cooked thoroughly and has started to brown.
  • Remove from oven and let sit for about 10 minutes.
  • Serve warm topped with vanilla ice cream. Enjoy!

Ingredients

For The Cobbler Filling

  • 5 large peaches, peeled, pitted and sliced
  • 3 cups blueberries
  • ⅓ cup sugar
  • ⅓ cup brown sugar
  • 2 ½ Tbsp lemon juice
  • 2 Tbsp corn starch
  • ½ tsp cinnamon

For The Topping

  • 1 ½ cups All-purpose flour
  • ⅓ cup brown sugar
  • ⅓ cup sugar
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 stick butter, cut into small pieces
  • ⅓ cup boiling water

Additional Topping, Optional

  • 1 Tbsp sugar
  • ½ tsp cinnamon

Instructions

  • Preheat oven to 375° and lightly spray a 3 quart baking dish with a non stick spray. Set aside.

For The Cobbler Filling
