I love corn dogs in all forms. I’ve been eating them since I was a kid. When I got older, I made them for myself quite often. Then, when I became a mom, I made them for the kids and their friends all the time. Now that my kids are moved out, I haven’t stopped making them. Hey, you never outgrow corn dogs! These days, I make it easier on myself by buying frozen corn dogs and then cooking them in my air fryer. Using the air fryer, the cook super fast and absolutely perfectly every single time. They’re deliciously foolproof!

There are two things that I love most about this recipe. A: It’s easy. Ridiculously easy. B: Mini corn dogs are the best! All you need is a fork and a little bowl of ketchup and mustard, and you’re set. Mini corn dogs are cooked to golden crispy perfection in under 10 minutes. That means that in less than 10 minutes, you get little corn dogs that are golden and crisp on the outside, tender on the inside, and then you get that delicious hot dog center. They’re the perfect afterschool snack or even a super fun dinner.

Step 1: Prep

Preheat the air fryer to 360 degrees and lightly spray the air fryer basket with extra virgin olive oil cooking spray.

Step 2: Air Fry

Place frozen mini corn dogs in a single layer in the basket and air fry for 8 minutes, shake the basket, or flip, halfway through cooking. If you cook them from thawed, air fry for 6 minutes. Enjoy!

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
