Do you love pie? The answer is probably yes. Do you love cookies? Again, the answer is probably yes. My family certainly loves both, so I find myself making batches of cookies and all sorts of pies quite a bit. I’ll serve them up for family desserts or bring them to potlucks or holiday get-togethers. Sometimes, I just make a pie or a batch of cookies for us to snack on throughout the week. We’re a family with a pronounced sweet tooth, so pies, cookies, and other sweet treats are always welcome.
Lemonade Pie Cookie Bites
As much as we love pies and cookies, they can start to feel stale. After all, even our favorite foods can get boring after a while. That’s when I started thinking about combining pie and cookies into one super treat. It couldn’t just be any pie and cookie combo, though.
At first, I thought about fruit pies, but that seemed like a mess, and the fruit filling would be hard to fit easily into a cookie cup. Then I thought about pumpkin or sweet potato pie as a filling. I just wasn’t sure how those flavors would pair with the sugar cookie crust I planned on using. Then it hit me. Lemon!
I make a delicious lemonade pie, and in my mind, I could already taste that delicious lemony filling coupled with the sugar cookie crust. I knew I had a winner. The rich creamy pie filling would be easy to add to the cookie crust, and the flavors would mesh perfectly. Thus, my lemonade pie cookie cups were born.
These lemonade pie cookie cups are absolutely delicious. The lemonade concentrate added to the filling adds an extra kick of sweet deliciousness, and the sugar cookie cup is the perfect backdrop to all that creamy citrus goodness. What’s more, the ease of making this recipe is also a big bonus.
The only actual baking involved is the cookie cups. The filling is all no-bake! The entire process only takes about 10 minutes of prep and 17 minutes in the oven. Of course, the cookie cups need to cool, and the filling needs to set, but still, that’s just a matter of waiting – not actually doing anything. Just how I like it!
Tips
This is an incredibly easy recipe to make. The cookie cups are simply tiny sugar cookie bites that you make in a mini muffin tin, so you’re really only making a basic cookie recipe. Add to that the fact that making the filling is simply a matter of mixing and chilling, and you have a recipe that’s perfect for beginners or advanced bakers who just don’t want to spend a lot of time in the kitchen.
Having said that, there are a few tips that will make it even easier to create these delicious cookie cups and ensure that they come out as delicious as possible for you. Be sure not to skip this section!
Mixing is Key
With both the pudding mix and the cream cheese, mixing is key.
Be sure to beat the pudding and evaporated milk vigorously until it becomes super thick. That’s key to getting the consistency of the filling right.
The same goes for the cream cheese. Make sure to beat it for two to three minutes until it’s thoroughly light and creamy and then add the frozen lemonade concentrate and beat until fully combined.
Make the Lemonade Pie Filling First
To make the best use of your time, make the lemonade pie filling first so that it has plenty of time to set up as you make the sugar cookie bites. Otherwise, you’ll be waiting around longer than necessary to put these tasty treats together.
Don’t Overfill the Muffin Tins
When making the sugar cookie bites, don’t overfill your mini muffin tin. Only fill the tins halfway. You want the cookie bites to be deep enough to hold a nice dollop of lemonade pie filling, and that’s it. If the cups are too thick, it will be difficult to make a hollow center later.
Let the Cookie Bites Cool – But NOT Completely
You want to let your cookie bites cool for about 15 to 20 minutes after taking them out of the oven. They should be just warm when it’s time to press in the center for the filling. If they’re too hot, they won’t hold their shape, and if they’re too cool, you won’t be able to effectively make the hollow center.
Easily Make the Hollow Center of the Cups
The easiest way to make the hollow center of these lemonade pie cookie cups is with a wooden spoon handle. Press the handle into the center of the cookie and then move the spoon around in a circular motion, keeping the center of the spoon in place. This will create a hollow in the cookie cup that’s just the right size for the filling.
Use a Piping Bag
Speaking of fill, a piping bag is your friend for this. It’s far, far easier to use a piping bag with a plain round tip to fill your cookie cups than it is to try to spoon the filling in.
Variations

Pudding
