Crock Pot Hatch Salsa Chicken Recipe
Crock Pot Hatch Salsa Chicken is tender shredded chicken cooked in a delicious Hatch chile salsa made from the famous New Mexico Hatch chiles. Hatch chiles are known for their delicious smokey flavor and this Hatch salsa chicken is an easy crock pot recipe that is great served with rice and beans, mashed potatoes or used in many other recipes.

I made this Crock Pot Hatch Salsa Chicken for dinner the other night and used the leftovers to make Hatch Chicken Burritos for lunch the next day. Having leftovers is perfect and this hatch salsa chicken can be used with tacos, nachos, enchiladas and all sorts of other recipes.

Easy Crock Pot Recipe
For this crock pot chicken recipe, add chopped onions to the bottom of a lightly spray crock pot. Place the chicken on top of the onions, sprinkle with cumin and red crushed peppers, then top with hatch salsa. I found this hatch salsa at Trader Joe’s here in The Woodlands. I’m pretty sure this can be found at the local Trader Joe’s near you. If not, you can substitute this salsa for a chile verde salsa.

New Mexico is known for hatch chiles. Every year in early autumn is Hatch chile season. The Rio Grande River Valley is where these delicious chiles are grown. When we moved to Texas at the beginning of this year, the local and amazing grocery store, H.E.B., has an area in the store where they hand out sample of different foods, sauces, and lots of other goodies. We definitely are frequent sample tasters every time we go into the store. One of the employees, Christina, gave us a quick lesson on Hatch chiles and how they are only available once a year. So, if you are a lover of these delicious chiles, stock up now because they won’t be around for too long.

Crock Pot Hatch Salsa Chicken
Ingredients
- 4 chicken breasts, boneless, skinless
- 1 large onion, chopped
- 12 oz jar Hatch Valley Salsa, bought from Trader Joe's
- 1/2 tsp ground cumin
- 1/2 tsp red crushed peppers
Instructions
- Lightly spray a 6 quart crock pot with a non stick spray.
- Place onions in bottom of crock pot and then top with chicken breasts.
- Sprinkle cumin and red crushed peppers on top of chicken then pour hatch salsa over the top.
- Cover and cook on high for 5-6 hours or on low for 10-12 hours.
- Shred, continue cooking for another half hour. Use for tacos, burritos, nachos or eat with rice and beans or mashed potatoes.
