Rocky road clusters are a bite-sized treat you’ll make again and again. Caramel, mini marshmallows, and almonds are coated in rich, melting chocolate for a flavor you can’t resist.

  • Werther’s Original Chewy Caramels: I prefer this brand because the caramel has such a buttery flavor.
  • Mini Marshmallows: Mini marshmallows give the add the wonderful gooiness to the inside.
  • Almonds: Coarsely chopped almonds add classic flavor and crunch.
  • Melting Chocolate: Melting chocolate adds a pretty coating and the final flavor for classic rocky road.

Variations

  • Melting Chocolate: Melting chocolate or chocolate candy coating both work well. You can use milk, semi-sweet, or dark chocolate varieties for this recipe.
  • Almonds: Use your favorite nuts to create a different flavor profile.
  • Caramel: Any chewy caramel square brand will work.

How to Make Rocky Road Clusters

Step 1: Cut the caramels into thirds. Then, place small piles of almonds, marshmallows, and caramel pieces in clusters on a parchment paper-lined baking sheet.

Step 2: Bake until the caramel begins to melt, then immediately remove the baking sheet. Let the clusters cool a bit, then gently press them together to ensure they stick. Place them back on the baking sheet.

Step 3: Melt the chocolate. Dip a couple of clusters at a time into the chocolate and place them back on the baking sheet.

Step 4: Repeat with all the remaining clusters. Let the chocolate set, then enjoy!

Expert Tips

  • Be careful to use parchment paper, not wax paper, in the oven.
  • It’s important to gently press the clusters together when they’ve cooled a bit to ensure they stay together when dipped.
  • I HIGHLY recommend melting chocolate or chocolate melting candy. Traditional chocolate requires careful tempering to achieve a pretty look and the best flavor. It’s not worth the effort.

What is the best chocolate for rocky road clusters?

Any melting chocolate or chocolate candy melt will work. Choose the highest quality for the best flavor. Stay away from traditional chocolate, as it requires extra steps for a good texture and appearance.

Why did my rocky road clusters fall apart?

If you don’t press the clusters together after they’ve cooled a bit, they may fall apart when you dip them into the chocolate.

How long will rocky road clusters last?

These clusters will last for up to 2 weeks in an airtight container at room temperature. For longer storage, freeze them for up to 2 months in an airtight, freezer-safe container or heavy-duty freezer bag.

Rocky road clusters are a bite-sized treat you'll make again and again. Caramel, marshmallows, and almonds are coated in rich, melting chocolate for a flavor you can't resist.

Ingredients
  

  • (2) 5 ounce bags Werther’s Original Chewy Caramels
  • 1 cup mini marshmallows
  • 1 cup almonds, coarsely chopped
  • 16 ounce H-E-B Chocolate Candy Coating, or your favorite melting chocolate

Instructions
 

  • Preheat the oven to 275 degrees and line (2) baking sheets with parchment paper. Set aside.
  • Cut each caramel into 3 pieces.
  • Place a little bit of almonds, marshmallow, and a couple pieces of caramel in a pile on the baking sheet.
  • Fill the baking sheet with little piles of nuts, marshmallows, and caramels.
  • Place in the oven and bake just until the caramel starts to melt.
  • Remove from the oven and once cool enough to handle, make sure all of the ingredients are stuck together, and place back on the baking sheet.
  • Once all the clusters are formed, melt chocolate according to package directions.
  • Place a couple clusters at a time into the chocolate.
  • Completely cover each cluster with chocolate and place on the baking sheet.
  • Repeat until all the clusters are coated.
  • Let the chocolate set up and enjoy!
