Rocky Road Clusters

Rocky road clusters are a bite-sized treat you'll make again and again. Caramel, marshmallows, and almonds are coated in rich, melting chocolate for a flavor you can't resist.

Ingredients

  • (2) 5 ounce bags Werther’s Original Chewy Caramels
  • 1 cup mini marshmallows
  • 1 cup almonds, coarsely chopped
  • 16 ounce H-E-B Chocolate Candy Coating, or your favorite melting chocolate

Instructions

  • Preheat the oven to 275 degrees and line (2) baking sheets with parchment paper. Set aside.
  • Cut each caramel into 3 pieces.
  • Place a little bit of almonds, marshmallow, and a couple pieces of caramel in a pile on the baking sheet.
  • Fill the baking sheet with little piles of nuts, marshmallows, and caramels.
  • Place in the oven and bake just until the caramel starts to melt.
  • Remove from the oven and once cool enough to handle, make sure all of the ingredients are stuck together, and place back on the baking sheet.
  • Once all the clusters are formed, melt chocolate according to package directions.
  • Place a couple clusters at a time into the chocolate.
  • Completely cover each cluster with chocolate and place on the baking sheet.
  • Repeat until all the clusters are coated.
  • Let the chocolate set up and enjoy!

Notes

Tips
  • Be careful to use parchment paper, not wax paper, in the oven.
  • It's important to gently press the clusters together when they've cooled a bit to ensure they stay together when dipped.
  • I HIGHLY recommend melting chocolate or chocolate melting candy. Traditional chocolate requires careful tempering to achieve a pretty look and the best flavor. It's not worth the effort.
